Last night’s dinner was absolutely delicious!

I came home from the gym hungry, but ready to try some experimenting in the kitchen, and I am so glad that I did!  When it comes to making meals that will satisfy the needs of Brian and me I have a lot to consider.  Brian really enjoys a hot meal at night, while I could eat salad everyday of my life (boring I know).  Brian really likes things that are saucy, while I usually go without the sauce or just put on the minimum.  Brian likes to get his protein from meat, while I try to find other alternatives.  In many ways we are complete opposites, but this meal was successfully able to please  both palates.

Vegetarian Stuffed Green Peppers

Yield:  2 servings

Cook Time and Prep Time: about 30 minutes

Ingredients:

  • 2 bell peppers
  • 1/2 cup cooked quinoa
  • 3-4 oz tempeh
  • 1 cup raw baby spinach
  • 1/4 cup chopped onion
  • 1/2 cup tomato sauce
  • salt and pepper to taste
  • 1/2 tsp ground red pepper
  • 1/2 tsp garlic powder
  • 1/4 cup low fat cheddar cheese

Directions:

Preheat the oven to 400 degrees.

Begin by rinsing off the green peppers, and cutting the tops of the peppers off.

Take all of the seeds and membranes out of the center of the peppers.

Place in a baking dish, and bake at 400 degrees for 15 minutes.

While the peppers are baking, chop the onion and the tempeh.

Place in a medium sized skillet over medium heat, and add the salt, pepper, red pepper,  garlic, and spinach.

Once the spinach is wilted, add the cooked quinoa to the mixture.

Once the quinoa is all mixed into the sauteed mixture add the tomato sauce and the cheese.

Once the peppers are done, place the mixture in the peppers.  Place the stuffed peppers back in the oven for 5 more minutes.  Remove from the oven, serve and enjoy!!

Nails

Our friend, Jenny, then came over so that we could do our nails!! While I was working on the cruise, I had my nails done with something called “shellac.”  This shellac is essentially a thick nail polish that literally does not chip, and I fell in love with it the first time I had it done.  When I was telling Brian about it, he told me that Jenny had the kit to do this type of nail treatment at home!! So, she brought over her kit and we started doing our nails 🙂

They turned out so well!  And so far, no chips 🙂

Morning Workout + Breakfast

This morning, I somehow slept in until 7am!  So I came up with this quicky 30 minute workout, so that I could get it done and get straight to work.

It left me sweaty and motivated for the rest of my day.  Definitely one that I will use again.

I then made myself a quick bowl of protein oats with strawberries and raspberries.

I have several meetings today, and then tonight, Brian and I are dog sitting!  It should be a good start to the weekend.
