And here we are.  It’s Friday again!

Can I get a TGIF?!

This week has been busy (as most weeks have been lately), and I am so ready to share my Five Things Friday (hosted by Clare from Fitting it All In) with you!

Five Things I Ate This Week:

Oats for the first time in over a month!  This week, I spent a day reintegrating non-gluten containing grains so I had oats for breakfast and brown rice with lunch and dinner.  I think everything went well, but I will share more details on that later 🙂

Mashed sweet potatoes!  I used to always make my sweet potatoes in the microwave for convenience, then we had a little issue with our microwave and I decided to cook the potatoes in the oven…such a good decision!

I have found that when I cook the potatoes in the oven at 400 for about 45 minutes to an hour (really until all of the juices start to come out) they are so so so sweet, it tastes like I am eating sweet potato casserole.  They taste even better with a little cinnamon sprinkled on top.  I am never going back to the microwave with these 🙂

Simple dinners.

This week, my food really hasn’t been to exciting, but thanks to a lot of weekend food prep it has been easy and convenient to get nutritious meals into my busy day.

Greek yogurt!

Yesterday, I reintegrated dairy products and had a bowl of Greek yogurt with lots of berries mixed in.  I used the frozen kind and mixed it all together the night before so the juices of the berries would melt into the yogurt.  In the past I would have sweetened my yogurt with Stevia but with the melted juice of the berries there was no need!

Ok, so I technically did not eat this but Brian did and loved it!

Flapjacked Protein Pancakes sent me some samples to try, but with the Whole 30 and reintegration process I have not been able to enjoy these pancakes.  Instead, I made a bunch of them ahead of time for Brian to have on hand for easy breakfasts and he absolutely LOVED them!  He said they tasted just like normal pancakes (and he is NOT a fan of other protein pancakes) and he has eaten them every day this week.

  • Haven’t done yoga this week, but I plan to this weekend!

Five Things Making Me Happy

A goal of mine this year is to complete one book a month.  I am the WORST culprit at starting 5 books at one time and then taking forever to finish any of them.  Brian and I read Divergent together this past month and finished on Monday this week, which I think is close enough to count for January 🙂

If you are a Hunger Games fan, then I definitely recommend this series for you!

Bubble Bath nail polish by OPI.

I saw a woman wearing this at the gym and I absolutely loved the subtlety of the color.  It looked so pretty and put together.  Now I need to get some for myself!

Tomorrow night, Brian and I will be headed to his dental school valentine’s dance!  We had a blast last year, and I can’t wait to do it all over again!

    • Thanks, Jessie!! I’m not sure where to find the pancakes in stores, but hopefully you will be able to find some near you!!! You would love them!

    • What color did you get? Sometimes I love the nude, simple look but other times I love the bright fun colors too! I love them all. And yes..Robyn is one awesome chica 🙂

  2. I am so intrigued to hear more details about how the food re-integration felt for you – is it creepy that I am so interested in this? haha hope not! Love Bubble Bath by OPI. I find it needs at least 3 coats otherwise you see your nail through it and that kinda bugs me. Have a fun weekend and at the dance! Oh and simple meals are always the best 🙂
