It makes things so much easier in the morning when there is something prepped and ready to go for breakfast.  Some of our recent go-to items are breakfast burritos, hardboiled eggs and fruit, and muffins.

Raspberry Orange High Fiber Muffins via Treble in the Kitchen

We love muffins in our house.  I love experimenting with different muffin recipes and ingredients, and Brian loves eating them 🙂

A few weeks ago, I was asked to partner with Meijer and Metamucil to share the importance of fiber in our daily diets and how easy and tasty it is to get the recommended amount!

When Brian and I lived in Indianapolis, we would shop at Meijer weekly and I am all about getting enough fiber in my diet, so the partnership seemed like a natural fit.

It really is pretty easy to get a good amount of fiber into your diet if you are eating as many fresh fruits and vegetables as you can, but with today’s busy, busy, busy go, go, go lifestyle I understand that sometimes eating healthy and getting fiber into your diet can be a challenge.

I know fiber can help maintain a healthy digestive system, is linked to lower blood cholesterol levels, and may even help regulate blood sugar levels so I really try to get enough fiber into my diet every single day.  If I find myself eating less fruits and vegetables than normal, sneaking something like Metamucil into my muffins is the perfect way to get a little fiber boost.

In addition to the Metamucil I used raspberries, chia, and almond meal to boost up the fiber content of these muffins.  Brian tried one of these muffins right out of the oven and LOVED it!  No extra fiber detected just a tasty, light, buttery and slightly sweet muffin perfect for breakfast or a snack.

Raspberry Orange Muffins

Yields: 10 regular sized muffins

Ingredients:

  • 2 1/2 cups almond flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1/3 cup mashed ripe banana
  • 2 Tbsp honey
  • 2 Tbsp melted coconut oil
  • 2 Tbsp water
  • 1 Tbsp flax meal
  • 2 tsp Metamucil sugar free orange
  • 1 tsp white or cider vinegar
  • 1 tsp vanilla extract
  • 1 cup raspberries
  • 2 Tbsp raspberry chia seed jam (or your favorite raspberry jam) divided between each muffin

Directions:

  1. Preheat oven to 350 (375 for high altitude).
  2. Grease and line 10 cups in a standard 12 muffin baking tin.
  3. Combine dry ingredients (almond flour, baking soda, and salt) in a medium bowl.
  4. Combine wet ingredients (eggs, banana, honey, coconut oil, water, flax, metamucil, vinegar, and vanilla) in a mixer bowl.
  5. Then, add dry ingredients in small batches to the wet ingredients.
  6. Once combined, carefully mix in the raspberries.
  7. Fill each muffin cup about 1/4-1/3 full.
  8. Top each muffin with 1/2-1 tsp of the raspberry chia jam.
  9. Cover the top of each muffin with the remaining batter.
  10. Bake for 15-18 min.
  11. Enjoy!!! 🙂

  2. Somehow, I’ve been eating too MUCH fiber leading up to long runs with this marathon training and trying to cut back! But on normal days, I eat oatmeal with fruit and yogurt with chia seeds and fruit for breakfast. Usually some high-fiber cereal like Mini Wheats as a snack too.

  3. I love muffins, and those look really good! I honestly had no idea you could bake with Metamucil! I really should make an effort to get more fiber. I love Meijer! They have the BEST cut up fruit. I would buy it all the time if I could! 😉

  4. My favorite way to get fiber is hiding it in smoothies with flax or chia seeds! I also love apples and in the fall/winter I get fiber from chili and winter squash! So yummy.
