OK friends, before I share this delicious granola recipe I HAVE to share how excited I am about the Bachelor finale!

Did you guys watch!?  I was rooting for Whitney, but honestly got SOOO nervous because they kept saying something “unexpected” was going to happen, which made me think he wasn’t going to choose her.  They are so cute together 🙂 I’m so happy for them and hope it truly works out!

Now, I can’t wait for the Bachelorette with Britt and Kaitlyn.  Should be interesting!

OK….about that granola 🙂

This nutty, sweet grain free and gluten free granola is the perfect pair with a cold, creamy smoothie, your favorite yogurt, fruit, or even just eaten all on it’s own!  The ingredients are mostly low to moderate in FODMAPS, so if you are FODMAP sensitive, you can definitely enjoy this treat, just make sure to watch your portion size!

OK guys…so I LOVE granola.  Honestly, a little too much.  It’s one of the foods that I almost can’t say no to…like I just can’t stop eating it (kind of like trail mix, mixed nuts, spiced pecans, chocolate chips…).  I’m sure we all have foods like that, right!?

OK, well that being said, I really wanted to create a low FODMAP granola recipe that was also paleo friendly for a little something sweet in the morning or as a snack.  Even though it’s hard for me to watch my portions, it’s still fun to have this around sometimes!

I love putting it on top of frozen banana “ice cream”, smoothies, and honestly eating it by the spoonful 🙂

It’s very simple to make, and even people NOT watching their FODMAP intake or following a paleo diet will love this stuff…promise!

Coconut Maple Granola

The sweetness of the maple really brings out the warm and nutty flavors of the added nuts and cinnamon.  This crunchy treat is great solo (by the hand or spoonful!) or great on top of your favorite yogurt or fruit smoothie!

Ingredients:

  • 2 cups unsweetened shredded coconut
  • 2 cups raw walnuts
  • 2 cups raw pecans
  • 1 cup sunflower seeds (I used roasted and salted for a little extra flavor!)
  • 1 egg white lightly beaten
  • 2 Tbsp water
  • 3 Tbsp melted coconut oil
  • 1/3 cup maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp salt

Directions:

  1. Preheat the oven to 300 degrees.
  2. In the bowl of a food processor or high powered blender, combine the coconut, walnuts, pecans, and sunflower seeds.  Pulse until everything is chopped up but not completely ground.  There will still be a few larger pieces of nuts, but that is ok because we want our granola to have texture and crunch!
  3. In a large bowl, beat one egg white until frothy.  Whisk in the water, coconut oil, maple syrup, cinnamon, and salt.
  4. Mix the nut mixture in with the wet ingredients until thoroughly coated.
  5. Line a rimmed baking sheet with a silpat baking mat or parchment paper.
  6. Spread the granola mixture on the baking sheet in an even layer.
  7. Place in the oven and bake for 20 minutes, remove from the oven and stir the granola making sure to spread it out in an even layer again.
  8. Place the granola back in the oven for 20 more minutes.
  9. Remove from the oven and allow to cool on the pan completely before serving!  I don’t break mine up into pieces until it is completely cook so that I have more large chunks  🙂
  10. Enjoy!
