It’s the first Tuesday in October! I am still in disbelief that it’s the month of Halloween.  Even though I really can’t believe it’s the tenth month of the year, I am still eating all the pumpkin 🙂

King Arthur Flour was kind enough to gift me with a couple of boxes of their gluten-free pumpkin bread mix.

While I am a die-hard rule follower, when it comes to recipes I can be quite the opposite.  I’m always tweaking, experimenting and adjusting to make things my own, so you better believe I did that with this pumpkin bread mix!

I simply mixed one whole can of pumpkin with one box of the bread mix and voila! I had pumpkin cookies out the wazoo! 🙂

Description

Cookies don’t get any easier than this. Simply mix one box of King Arthur Flour gluten-free pumpkin bread mix with a can of pumpkin and you have cookies ready to pop in the oven!


Ingredients

Scale
  • 1 box King Arthur Flour gluten-free pumpkin bread mix
  • 1 15 oz can of pumpkin puree

Instructions

  1. Preheat the oven to 350.
  2. In a large mixing bowl, combine one can of pumpkin with one box of pumpkin bread mix. Mix until combined.
  3. Spoon cookies by tablespoonful onto an ungreased baking sheet.
  4. Bake at 350 for 15 minutes, or until the cookies are set.
  5. Allow to cool for 10 minutes and enjoy!

  2. I can’t tell you how many cakes I’ve baked recently that have these two ingredients (just change the box to any flavor imaginable!) It’s so easy and simple, and I love how fudgy the cake/cookies turn out. SO good!
