Roasted nuts blend together to make a nut butter blend that’s as good as the fancy stuff you find in the store!

Simple Roasted Nut Butter

Guys, I CANNOT believe that we are in our last full week living in Denver (sorry for mentioning the move like 50000000x…).  This recipe was totally inspired by our upcoming move.

If you are like me, then you have a freezer (pantry, fridge, cabinet, wherever you store nuts, grains, bulk items) full of partially emptied bags of nuts.  Anyone else out there with me?

Because we are moving, I did a SERIOUS purge of all things that we did not need or want to move with us.  Of course, I didn’t want to just throw all of these half emptied bags of nuts away, so I made a mixed nut butter!

The nuts I had on hand were:

  • Pecans
  • Macadamia Nuts
  • Walnuts
  • Brazil Nuts
  • Pumpkin Seeds

The end result was a wonderfully creamy and flavorful blend of nut butter that Brian and I have been using up these past couple of weeks (we typically have several jars of nut butter open at a time so it takes us a while to get through a jar!).

Roasting the nuts really helps bring out the flavor, and I’ve found that it helps them turn into “butter” quicker.

Simple Homemade Roasted Nut Butter

  • Yield: 2 cups of nut butter 1x

Ingredients

Scale
  • 4 cups of nuts (any blend of mixed nuts should work!)

Instructions

  1. Roast the nuts at 400 degrees Fahrenheit for about 5 minutes or until fragrant.
  2. Blend the nuts in a food processor, taking breaks to scrape the sides. Stop blending when the nut butter is smooth and creamy. (This could take several minutes)

Notes

This recipe is made with low FODMAP nuts but has not been tested for FODMAP content. High fat foods may be a gut irritant, so please pay attention to your body.

  1. I don’t blame you for making all your nuts into nut butter. Consolidating food before moving can be a real challenge! I love the idea of blending all these nuts, too! You’d get so many different minerals and nutrients from the different nuts.
