I hope you all had a fantastic Memorial Day weekend! Brian and I honestly had a BLAST.  I feel like we rarely had a dull moment and were enjoying so many different parts about being in the Midwest.  Honestly, I needed a good ole Midwestern summer fun weekend like that to remind me of all the fun things Brian and I have to look forward to these next few months.

Thursday, I took the pups on a looong walk (per usual) and we were pretty chill because Friday Brian and I spent the day at Kings Island.  It had been YEARS since Brian and I had been to an amusement park (we visited Disney shortly after I graduated college), and my sister went to Kings Island last year and had a blast.  We took her advice, and spent the entire day riding roller coasters and soaking up the sun.  So fun!

Kings IslandSaturday we went to the Broad Ripple Farmer’s Market and did some work in the yard before heading to a neighborhood cook out.  Sunday, we went to church, walked the pups, put our first grill together, and went to an antique shop before checking out Upland Brewing with some new friends.  Yesterday, we hiked in McCormick’s Creek near Bloomington before spending the afternoon with friends on the lake.

I’m not sure about you, but I know I need to always have a little something in my purse or in the car for snacking on when out and about.  It’s the times I DON’T have something when I truly need it!

A few weeks ago, we celebrated what would have been Brian’s paternal grandmother’s 100th birthday.  I made oatmeal raisin cookies for the occasion because she always had homemade oatmeal raisin cookies in the cookie jar.  Since then, I’ve had oatmeal raisin on the brain…which is how I thought to come up with that flavor combination for an energy bite!

There are several reasons why I LOVE these oatmeal raisin energy bites – delicious, easy to pack, full of nutrients, etc…

But I also love how easy they are to make!  Sometimes I make energy bites that require a food processor or other fancy equipment, but these energy bites are no frills.  No fancy equipment required!  Just a bowl and a spoon or spatula.

The ingredients in these bites are sweet and flavorful, and for those with dietary concerns they are also – gluten free, dairy free, low FODMAP (raisins are low FODMAP in a 1 Tablespoon serving according to the Monash University app), and vegan.

Oatmeal Raisin Energy Bites are the perfect snack for on the go. Easy to make (no food processor required!), and they keep for a long time in the freezer!

Instructions

  1. Combine all ingredients in a bowl and stir until combined. I found it easiest to combine with clean, bare hands!
  2. Roll into balls that are about 15 g or 1 Tbsp.
  3. Store in the freezer until ready to enjoy!

While I was photographing these bites, Rooney SO wanted in on the sampling action.  It was too cute, but I resisted in giving her a bite and made her sit and lay down instead…she wouldn’t even look me in the eye!
