It is officially spring – and yesterday we woke up to a snowy white blanket nearly 3 inches thick!

Thankfully, today the weather is expected to be dry, sunny, and about 47 degrees.  Hoping things stay this way for a while and continue to creep into the warmer temperatures.

Something else of note – today is the last day of my clinical rotation!

I have been working in a variety of hospital and healthcare settings since January – and today is my last day with this type of experience for my dietetic internship.  All of the rotations excite me, but honestly I was pretty dang nervous when it came to starting my clinical rotations in January.  Despite being nervous to get started – I truly enjoyed every single minute of these rotations! I learned so much!

Now – I’m talking smoothie recipes with this Banana Honey Pickup!

Growing up, my parents would make us a “Banana Honey Pickup” as a special snack.  They would blend milk, bananas, honey, and graham crackers for a thick and creamy shake that tasted SO good!  I haven’t had one of these smoothies in SO long – but when a friend dropped off some honey…I couldn’t resist putting my twist on the recipe!

Recently, I was introduced to RJ Honey, an Indiana honey company that is located not too far from Indianapolis!  The honey tastes absolutely delish, and the folks out there are SO friendly.  Brian and I plan to head out to their facility in the warmer weather to learn all about bee farming – I’ll make sure to keep you posted!

While my version doesn’t contain graham crackers (I subbed in almond butter, flax meal, and vanilla extract) it seriously tastes just like my childhood treat!

The recipe is simple – toss ingredients in the blender and blend until desired consistency.  If you want a little more volume or less thickness, simply add a bit more liquid.

Honey is not a low FODMAP food – but consuming local honey helps the local economy (shop local!) and honey is rich in B vitamins.  If you are local to Indiana, RJ Honey can be found at a ton of locations around the state -just check the site!

Ingredients

Scale
  • 1 banana, frozen
  • ½ cup almond milk, unsweetened
  • 2 tsp almond butter
  • 1 tsp ground flax meal
  • 1 tsp vanilla extract
  • 2 tsp honey

Instructions

  1. Place all ingredients in a blender and blend until smooth and creamy.
  2. Enjoy!

    • Thanks for asking! I personally have not pre-made smoothies successfully. The texture often changes, they become watery/ingredients separate, etc. That being said, I bet you could put certain ingredients in containers in the freezer so the morning of you just dump and blend! Would love to hear your thoughts and advice here too!

  1. I’m still hoping for spring to finally get its butt over here, haha. I’m definitely interested in hearing more about the bee farming later on! I just acquired a new patient last week who is a beekeeper! :O I wanted to pick his brain, but unfortunately, an office visit wasn’t quite the time and the place for that, haha. I’m definitely gonna have to try this smoothie soon! It looks amazing!
