This past weekend was pretty bittersweet in our house.

It was our last official weekend in our current house.

If you follow along on social media (specifically Instagram), then you may already know that we are renovating a house from the 1920s and selling (well…we sold!) our current house that we moved into when we moved back to Indiana from Denver.  It’s all been a bit of a whirlwind in the best way possible.

Since completing my internship in July, studying for and passing the registration exam in August, beginning work in September, putting our house on the market, traveling for blogging and nutrition conferences…easy, simple, fulfilling week night meals have been more important than EVER!

The method is extremely simple.  Basically season and roast the vegetables, then season and add the shrimp to the same sheet pan.

I choose to serve my tacos in lettuce cups because I really love the fresh, crisp crunch but you can absolutely use the taco shells you love.  The shrimp and roasted vegetables would also be delicious on top of a salad!

For those with food sensitivities: these low FODMAP tacos are gluten free, dairy free, grain free (depending on the taco shell you choose), and low FODMAP.

If you do not have food sensitivities, please feel free to use your favorite taco seasoning (store bought or homemade work well!)

Ingredients

Scale
  • For the Roasted Vegetables:
  • 4 cups of sliced bell pepper and sliced zucchini (about 1 bell pepper and 1 medium zucchini)
  • ½ Tbsp extra virgin olive oil
  • 1/2 Tbsp Fody Foods low FODMAP Taco Seasoning
  • For the Shrimp:
  • 1 lb medium to large peeled and deveined shrimp
  • ½ Tbsp extra virgin olive oil
  • 1/2 Tbsp Fody Foods low FODMAP Taco Seasoning
  • For the Tacos:
  • ½ cup diced tomato
  • Bibb lettuce, removed from head and divided into 8 “cups”

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a large bowl, toss together the strips of bell pepper and zucchini with ½ Tbsp olive oil and 1/2 Tbsp Fody Foods low FODMAP Taco Seasoning.
  3. Spread seasoned vegetables in a single layer on a parchment lined baking sheet and roast in the oven for 20 minutes.
  4. While the vegetables are roasting, place the shrimp in a medium bowl with the remaining ½ Tbsp extra virgin olive oil and 1/2 Tbsp Fody Foods low FODMAP Taco Seasoning.
  5. After roasting the vegetables for 20 minutes in the oven, remove the pan from the oven and toss the shrimp on the pan with the vegetables. Try to keep everything in a single layer.
  6. Roast the shrimp and vegetables for 7-8 more minutes, or until the shrimp are opaque and 145 degrees Fahrenheit.
  7. Divide the bibb lettuce into 2-3 “shells” per person. Top each lettuce shell or cup with a portion of shrimp and roasted vegetables and top with fresh tomatoes.

This recipe has not been tested for FODMAP content, but ingredients are used in amounts compliant with the Monash University App and guidelines. Please eat the foods that make you feel your best!
