I had to stop for an unsweetened tea today from McDonald’s.  Iced tea is my favorite summer drink 🙂  My mom likes it a lot too.

Tonight, I helped out the family I nanny for by making dinner.  They LOVE shopping at Trader Joe’s and Fresh Market.  I do too, but Meijer is closer in distance and in price range 😉  They had so many fun sauces and ingredients for me to look at it was almost overwhelming.  I decided to throw my creative hat, and it ended up tasting pretty good!  I threw a bunch of ingredients together and came up with “Southwestern Quinoa Veggie Mix.”

In the mix was:

  • 1 Tbs Olive Oil
  • 1 Onion
  • 1 Yellow Summer Squash
  • A Handful of Grape Tomatoes
  • 1/2 Cup Corn Relish
  • 1/4 Salsa
  • Salt and Pepper to taste
  • 1 Can Black Beans
  • A Couple of Baked Chicken Breasts
  • 4 Servings of Quinoa cooked according to package directions
First I sauteed the onions until tender in the olive oil.  I then added the chopped summer squash, quartered tomatoes, corn relish, salsa, salt and pepper, and black beans.  I stirred that and let it come to a boil.  Once it was very aromatic and the vegetables were soft, I added in the quinoa and chopped chicken and stirred it all in one bowl.  This dish came together in around 30 minutes and is chock full of healthy protein!
After whipping that meal together, I came home to make dinner for Brian and I.  I attempted a new recipe that I had been eyeing for a while….and it didn’t exactly turn out as planned.  On the menu for tonight was a “Green Pizza” with cauliflower pizza crust.  In order to make the cauliflower pizza crust, I used this method.  Everything looked great!  We prebaked the “crust” according to the directions.

We then added chopped broccoli, baby spinach, and red onion tossed in olive oil, white wine vinegar, basil, Italian seasoning, garlic, salt, and pepper. We baked it again until the toppings were melty and wilted.  It smelled soo delicious, Brian and I couldn’t wait to try it!  I cut in it to serve it up….and the crust was more like mush!  I was really disappointed that we didn’t have little slices of pizza, but it still tasted delicious!  We topped each plate of mush with chopped tomatoes and onions.  Although this recipe didn’t turn out, I know I will be trying it again (Brian went back for 3rds!!) Maybe a longer prebake cooking time?  We will figure it out!

After dinner, I was in the mood for a little activity, so Brian and I took our matching bikes on a little spin around town.  The weather was perfect.  One of my favorite things to do in the summer is to go on a walk or ride my bike in the evening after dinner?
