Dinner last night came together in just under 30 minutes and was completely delicious.

salmon dinnerBaked salmon, roasted veggies, and a raw tomato.  A combo that I have enjoyed many times before…but for some reason, last night it tasted more delicious than usual!  This fish and veggies were cooked perfectly and Brian and I gobbled up every bite.

I simply preheated the oven to 400 degrees.  I cooked both the fish and veggies for 20 minutes.  The salmon was topped with sea salt and rosemary, and the veggies were cooked in a little coconut oil and sea salt.

Such a simple meal…but seriously it was cooked to perfection 🙂
