Recently, I mentioned that I was in a bit of a food rut.

All of my meals were looking the same, tasting the same, and were getting a bit boring.  I missed the experimentation and process of actually cooking rather than throwing something in the crock-pot or microwaving.

So, I came up with a weekly menu that did not include baked fish and veggies on the list and made some tasty new dishes for breakfast, snacks, lunch, and dinner.

Mock Spaghetti and Black Bean Meatless Balls

This baked “spaghetti” dish was delicious and very simple to make.  My version had broccoli slaw in place of spaghetti, and Brian’s version had whole wheat pasta combined with broccoli slaw and spinach.  Both were equally tasty!

Mock Baked Spaghetti and Black Bean Meatless Balls

Yields:  1 serving

Ingredients:

  • 3 black bean meatless balls, cooked (recipe here!)
  • 1 cup broccoli slaw
  • 1/2 cup fresh spinach
  • 1/3 cup marinara sauce
  • 1/4 cup lowfat shredded cheese
  • Salt, pepper, and garlic to taste

Directions:

  1. Preheat the oven to 400 degrees.
  2. Steam the broccoli slaw and spinach using your preferred method for steaming vegetables (microwave or stove top will work just fine!)
  3. Combine the broccoli and spinach with the marinara sauce, salt, pepper, and garlic.  Pour into a small, greased baking dish.  Top with the meatless balls and cheese.
  4. Bake in the oven at 400 degrees until the cheese is melty and bubbly, around 8 minutes.
  5. Enjoy!
