As I browsed facebook yesterday, I came across this appetizing picture from Two Peas and Their Pod.

A delicious serving of zucchini “nachos.” ย I was instantly inspired to make something similar for dinner. ย I’ve mentioned before how I will often just “wing” a recipe without following the directions, and that is what I did here. ย I baked two small zucchinis in the oven at 400 for 20 minutes. ย I then topped the zucchini with all the nacho fixings we had in the house!

These were so amazingly delicious and easy, Brian and I both scarfed them down in no time. ย I can’t wait to make them again! ย Maybe next time I will follow the actual recipe ๐Ÿ˜‰

Cookbooks

Speaking of following recipes…

One of my absolute FAVORITE things to do is to read and look through cookbooks. ย I am a bit particular about the cookbook: ย it must be brightly colored and it must have several pictures (one with each recipe is preferable!).

When I was younger and even in college, I would even go to the library to specifically check out cookbooks to read in my spare time. ย Once I graduated college, time really got the best of me and I got away from this hobby, but a couple of weeks ago I actually won a cookbook written by Averie of Averie Cooks!

Not only is this cookbook brightly colored with pictures for EVERY recipe, but it is all about recipes with peanut butter! ย If you have been reading this blog for a while, you know about my love for peanut butter. ย This cookbook is absolutely perfect in every way, and I couldn’t be more excited to read it.

Receiving this cookbook really sparked my want to begin reading my cookbooks again! ย I have some very pretty cookbooks that have been calling my name for quite some time, yet they have only made a pretty display in my kitchen.

Because I want to read my cookbooks, try new recipes, and learn new techniques I have created a little challenge for myself.

I will create one recipe per week from a cookbook without altering the recipe.ย 

The latter part of that challenge is going to be the hard part! ย I am going to start small and only run my challenge through the end of September, but who knows…maybe I will continue longer!

The recipe that I created this past weekend was from Averie’s Peanut Butter Comfort cookbook.

  1. That’s a GREAT idea!! I love cookbooks too- I’m trying to collect them from every place I visit! I got one in Vietnam a few years ago and made it my goal to buy one everywhere I travel. Can’t wait to see all your recipes!!!

    • What a great thing to collect from your travels!! There were TONS of cook books in Italy, but I failed to pick one up…at least I have the recipes from our cooking class!

  2. I used to cook from cookbooks all the time, but I tend to do my own thing or use bloggers recipes now. ๐Ÿ™‚ My favorite cookbook (or the one I’ve cooked the most from) is Peas & Thank You. I actually should order her more recent one, because I love all of Sarah’s recipes. ๐Ÿ™‚

    • Sticking to the recipe while baking is essential…while cooking I LOVE being able to experiment ๐Ÿ™‚ It drives my mom nuts!

  3. I love to read cookbooks, too, and will often check them out of the library to get my “fix”! The cookbook I use the most is an Indian cookbook called “Curried Favors”, but my favorite cookbooks to read are the Barefoot Contessa’s , though I don’t make many of her recipes. (I just love Ina Gartner and I know we could be BFFs.) I am going to have to add “Peanut Butter Comfort” to my collection, those cookies look scrumptious!

  4. I highly recommend peanut butter blondies recipe. It’s so fattening, but tastes absolutely awesome, so make sure you invite loads of people to share ๐Ÿ˜€
