I decided to take a little break from the wedding blog posts to share a yummy recipe with you that is perfect for a cookout, pot luck, or even just to snack on by yourself!

Saturday, Brian and I went to a summer cookout held by the director of the dental clinic at his school.

There were lots of yummy sweets and treats on the table, and I had my fair share but because I knew that there would be plenty of desserts and other fun things to eat I wanted to bring something fun AND nutritious that incorporated some veggies.

At my bridal shower, my mom made a delicious dip of hummus with lots of goodies on top.  I couldn’t get enough of it then, and it was the perfect dip for celery and carrots (which just happen to be two of my favorite veggies!).

I used that dip as inspiration for the delicious layered hummus dip that I took to our summer cookout.

Layered Hummus Dip

Ingredients:

  • 1 1/4 cup of your favorite hummus (can be homemade, store bought..anything you like!)
  • 1/4 cup chopped black olives
  • 1/4 cup chopped artichokes
  • 1/4 cup chopped cucumbers
  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped red onion
  • 1/3 cup feta (I used garlic and herb, but you could use reduced fat, plain, or any variety you like!)

Directions:

I opted for my favorite store-bought hummus to save a bit of time while making this appetizer rather than making my own hummus.  It still tasted great, and I appreciated the extra time buying the hummus allowed me to have.

My favorite store-bought hummus?  Sabra Roasted Pine Nut.

Spread your hummus onto a pretty plate into a smooth, even layer.

Top with all of your toppings (black olives, artichoke, cucumber, red pepper, red onion, and feta).

While adding the toppings simply sprinkle evenly over the entire dish.  Voila!! Your yummy appetizer is complete, and you can serve it with your favorite veggies, homemade whole wheat pita chips, or anything your heart desires.
