Happy Halloween!

I have been absolutely loving all of the healthy and cute Halloween food inspiration from Pinterest and around the web, so today I will share some of my favorites with you in honor of this fun holiday.

Because Brian and I don’t have any crazy plans this Halloween, I decided to whip up a delicious batch of cookies for Brian to enjoy at home and for my co-workers to enjoy at work.  Pumpkin Oatmeal Chocolate Chippers 🙂  Recipe at the bottom of the post!!

Pumpkin Oatmeal Chocolate Chippers

  • 1 cup coconut oil
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 2 cups of oatmeal
  • 1.5 cups flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/4 tsp ground cloves
  • 1 bag of chocolate chips

Directions:

  1. Preheat oven to 350.
  2. In a large mixing bowl, combine the coconut oil and sugars.  Mix until a creamy consistency.  Add in the eggs, vanilla, and pumpkin puree.
  3. Once that combination is thoroughly mixed, add in the oats, flour, soda, salt, cinnamon, nutmeg, and ginger.
  4. Begin stirring slow so that the flour doesn’t go everywhere and speed up the mixer as the flour is combined into the mixture.
  5. Once the batter is mixed, add in the chocolate chips.
  6. Scoop by tablespoon full onto a baking sheet and bake for 10-12 minutes.
  7. Allow to cool up to 5 minutes on the pan and then place on wax paper to finish cooling.  ENJOY!!!

  1. Those cookies look so yummy! And I just finished my last cookie from my pumpkin snickerdoodle batch so these will be a perfect replacement 🙂

    I look forward to PB cups everyday of the year but it’s only an acceptable meal replacement on Halloween 😉

  2. those “pumpkins” are adorable! I would never of thought to add celery for the stem to oranges. How creative!
