Hey friends!

I’m actually blogging on my lunch break right now, which is kind of weird for me because I normally blog in the mornings.  Nothing like a good shake up in the old routine 🙂

This past weekend, I went up to Fort Wayne to hang out with my mom and we had a GREAT time.  As I was compiling the photos for this post I realized I didn’t get a single snapshot of us together, but I DID get lots of food photos…so here is a peak at our weekend through food.

Friday

Right after work Friday night, I hit the road and headed up to Fort Wayne.  I packed a light but yummy dinner of veggies to dip in Nuttzo with a hard boiled egg.

That was pretty much it for Friday.

Saturday

Saturday morning, I got up early and after a delicious breakfast of eggs topped with salsa and a side of fruit and peanut butter I got some computer work done.

Mom and I had big plans for later in the morning…

We hit up a Bodycombat class at the gym just down the road from her.  My gym offers a 30 minute Bodycombat combo mixed with CXWORX that I take advantage of on Fridays so I forgot how much a FULL combat class really works my shoulders!  Mom and I were both sweaty by the end and were loving that exercise high.

After working out, it was time to get showered up and eat some lunch.  Unfortunately, I got a little heavy-handed with the black pepper on my salad!  Oops!

We hit up the grocery store and I found the biggest bags of cheese I have ever seen!

Then, we hit up the movie theater to see Noah.

It was a good movie, and the effects were really great (at least to me!).  I’m glad we saw it on the big screen.

By the time we got home, we were both ready for dinner and luckily mom had a recipe she had been wanting to try.

The shrimp was cooked with white wine, lemon, capers, and it was lightly breaded.  Seriously, it was so good! And the steamed asparagus on the side was absolutely perfect 🙂

We then spent some time putting together our menu for Easter (Brian and I are hosting!), then got into our jammies, curled up with a bowl of ice cream and watched The Heat.

Oh my gosh…the movie was so funny!!! I stayed awake for about 95% of the movie, but at the end I just couldn’t keep my eyes open.  Oh well, I still enjoyed what I saw of the movie 🙂

Sunday

Sunday morning Mom and I ate our breakfast then headed right out the door to church.

breakfastAfter church, we helped withe the “Kids Church.”  That was an interesting experience.  I have nothing against children, I am just not good with children.  Some people are so naturally GREAT with kids, and I wish I was but I’m not so I just kind of followed my mom’s lead as we worked with the cute 4 year olds.

After we got home, mom headed out and I headed home.

While driving home I made a fun pit stop at Earth Fare and I was amazed to see they had Nuttzo on the shelf!

They also had a julienne peeler.

I am hoping this will allow me to spiralize veggies WITHOUT the spiralizer…wish me luck!

Once I got home, I whipped up a quick power bowl dinner with spaghetti squash, spinach, zucchini, broccoli, cauliflower, sweet potato, sprouts, guacamole, salsa, and salmon.

While whipping up dinner, I prepped my food for the week!  I’ve got a BUSY week ahead of me with a few late nights, so I had to pack up dinners in addition to my lunches.

Felt good to get all that food prep done 🙂

And then…I went to bed!

Lots going on but I loved every second of it!

  1. I don’t mean this to sound harsh, but veggies, nut butter, and an egg for dinner? Not exactly painting the most healthful picture. If these are all your eats throughout the weekend you are definitely painting a very disordered picture for readers.

    • Hey Sara! Thanks for your honesty and while this is many/most of what I ate it certainly is not everything (I left out many of my snacks like hummus and veggies, trail mix, larabars…) simply because I didn’t take a picture! I realize I should have mentioned that in the post because that can be a pretty skewed view of what I actually eat. Thanks for reading and thanks again for being honest 🙂

    • Honestly, the money isn’t the issue with spiralizer, the big thing for me is lack of storage space! Hopefully my little peeler will get the job done 🙂

    • I know it’s tough being far from home! I’m trying to soak up all the mom time I can before Brian and I move to Denver!!
