While I am full swing into this whole low FODMAP experiment, I am really trying to limit my sugar consumption.  It’s no secret that I love sweets and certain sugars (maple syrup and table sugar) are OK  while following the low FODMAP diet.  That being said, after much indulgence over the holidays I am more than ok saying “no thank you” to dessert more often than not right now.

Even though I am limiting my sweet treat intake, Brian likes to have a little something special on hand for a little after dinner treat.  This is totally fine by me, and I would much rather have a little homemade something laying around rather than something super processed and if I’m going to make a sweet treat, I may as well make it something I can enjoy if I want to!

3 Ingredient Peanut Butter Cookies via Treble in the Kitchen

These cookies are simply made with peanut butter, eggs, and sugar.  I occasionally add chocolate chips for fun because I simply LOVE the taste of peanut butter and chocolate together.  Honestly, I have been making these cookies for years, and I can’t believe I haven’t shared them with you.  They are kind of a staple recipe because they are SO easy to whip up and everyone loves them whenever I share 🙂

So, if you have a hankering for something sweet or need to make a dessert to share with little time to spare, these cookies are it!

3 Ingredient Peanut Butter Cookies

low FODMAP, flourless (can be gluten-free if your PB is certified gluten-free)

Ingredients:

  • 1 cup sugar
  • 1 large egg
  • 1 cup peanut butter (this recipe works well with natural or “regular” peanut butter, the consistency is just slightly different but both equally tasty!)
  • *Optional–1 cup of your favorite chocolate chips.  I really like Enjoy Life Mini Chips

Directions:

  1. Preheat the oven to 350°F.
  2. In a large mixer bowl, combine the sugar, egg and peanut butter.  Mix until combined.
  3. Scoop cookie dough into Tablespoon sized balls onto cookie sheet and flatten by criss-crossing a fork over the top (to get that traditional peanut butter cookie look.)
  4. Place tray of cookies in the oven and bake for about 10 minutes, or until golden brown and slightly firm.
