This is not a diet plan, and Shannon makes that VERY clear ๐Ÿ™‚ ย This 6 week plan includes:

  • General supply list of things you may need for packing your lunch and food prepping.
  • Meal menus with recipes for healthy, delicious meals for 6 weeks.
  • Shopping lists that coordinate with each week’s menu.
  • Gives tips for what to do with extra ingredients you may have on hand after prepping and making the recipes for the week.
  • Provides ideas for weekly activities that encourage positive self-image and taking time for yourself.

There areย so many amazing printables in this handy guide that will make your meal planning and prepping extremely organized, which is a big key when it comes to eating healthy foods.

I love that thisย not only focuses on eating healthy foods, but it focuses on being a happy person and loving yourself. ย To me, having self acceptance and being happy in your reality is SO important and affects almost everything in your life.

When I was looking through the guide, I was so excited to see really yummy breakfast and lunch recipes!

One recipe I KNEW Brian would love…

Broccoli Breakfast Muffin

Broccoli Breakfast Muffin

It’s a perfect breakfast to make ahead on the weekend, wrap in foil and pop in the freezer until you are ready to eat (at least that’s what we did!)

Here is how you make it:

Ingredients:

  • 4 large eggs
  • 2 Tbsp unsweetened almond milk or milk of choice
  • 1 cup steamed, finely chopped broccoli
  • 1/2 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 4 whole wheat English muffins

Directions:

  1. Preheat oven to 325 degrees. Grease a monster muffin pan and set aside.

  2. Whisk together eggs and milk.

  3. Stir in broccoli, onion and cheese.

  4. Bake for 45 – 55 minutes until muffins are set and no longer wet in the center.

  5. Place on English muffins and serve.

There are plenty of other delicious recipes from Shannon in this guide that I can’t wait to try. ย (I’ve got my eye on the banana bread oatmeal!)

  1. Yum! That English muffin looks really good. I bet it would be good with an Ezekial bread English muffin too. Have you ever tried that bread? I hope you make the banana bread oatmeal, that sounds delicious too!

    • I don’t really eat that much bread at home and Brian doesn’t care for the Ezekial bread, but I’m sure it would be great!!! ๐Ÿ™‚
