It has been SO long since I have played around with chia seeds.  Seriously though, I think it’s been over a year!

These little seeds are stinking amazing.  They are high in antioxidants, fiber, protein, omega-3 fatty acids, and calcium.

If you haven’t used them before, get ready to be amazed.  When you add them to liquid they create a gel-like substance which is exactly how this chia pudding is created!

This pudding is SO simple, as it only contains 5 ingredients and the majority of the work is done by the little chia seeds as they chill in the fridge for a few hours (or overnight!).

And because this chia pudding is so healthy…honestly you could eat it for breakfast if you wanted 🙂

Another star ingredient in this chia pudding?  Chocolate almond milk…

While I typically stick to unflavored and unsweetened nut milks, the extra sweetness and rich, chocolate flavor really takes this dessert over the top.

Another thing to note about this recipe is that the pudding is blended.  This simply gives it a smoother texture, closer to that of traditional pudding.  While the blended consistency is really a treat if you don’t care for the chewy texture of chia seeds, it does require a high-powered blender.  If you don’t have a high-powered blender, don’t worry about blending and enjoy the chewy little chia!

This chia pudding is delicious on it’s own or with any topping you like…I prefer tart raspberries while Brian prefers Love Grown simply oats oat clusters granola 🙂  To each his own!

Description

This simple, chocolatey, nutritious, make-ahead dessert is just what you need when that sweet tooth is calling. 5 ingredients plus any toppings you like and you’ll have a pudding that will satisfy that sweet craving in no time!


Ingredients

Scale
  • 1 cup Chocolate Blue Diamond Almond Breeze
  • 1/2 cup chia seeds
  • 1/2 tsp vanilla extract
  • 1 Tbsp maple syrup
  • 1 Tbsp nut butter (any nut or seed butter will work!)

Instructions

  1. In a large bowl or cup, combine the almond milk, chia seeds and vanilla.
  2. Place chia mixture in the fridge for at least 2 hours or overnight.
  3. The next morning, remove the thickened chia mixture from the fridge and place in a high powered blender or food processor.
  4. Add the maple syrup and nut butter and blend until desired consistency (the longer you blend the smoother it will be).
  5. Place back in the fridge to chill before serving.
  6. Top however you desire! (we love granola or fresh fruit!)

Notes

While the blended consistency of this pudding is really a treat if you don’t care for the chewy texture of chia seeds, it does require a high-powered blender. If you don’t have a high-powered blender, don’t worry about blending and enjoy the chewy little chia!
Simply combine all the ingredients together in the first step (mix thoroughly) and place in the fridge for 2 hours or overnight and enjoy your pudding as soon as you remove it from the fridge!

  1. Chia seeds are incredible little things. I’ve had both good and bad chia pudding, but I bet blending really makes a huge difference. I have found however, making anything chocolate usually helps a ton.
