When I heard the word “tapas” I immediately thought of a wonderful restaurant back home in Indiana called Barcelona Tapas.  Way back when Brian and I were very new and not even officially “dating” we went on a date to this delicious small plate eatery.  While ALL of the dishes were fabulous, the one dish we always get?  Patatas Bravas.  Roasted potatoes in a spicy tomato sauce.  Of course, I had to attempt to make my own!

Several recipes for patatas bravas I found called for fried potatoes (or should I say patatas), so I opted to roast mine in the oven to get a nice crispy texture on the outside and soft fluffy center on the inside.

Also, lots of onion and garlic are typically used in this dish, so I opted for fresh chives to give the dish a ton of zippy, fresh flavor.
One trick I need to mention….soaking the potatoes in hot water then thoroughly drying prior to baking.  This allows the potatoes to get that super crispy outer texture.  It basically makes them even more delicious! (You can also do this when making homemade baked french fries!)

Now that we can have our very own patatas braves at home, I’m kind of thinking I need to whip up a whole tapas menu!  Hmmmm…!

Description

A healthy and simple take on a classic Spanish tapas dish, Patatas Bravas. Full of crisp potatoes, fresh herbs and a flavorful red sauce, this is the perfect small plate to share with those you love!


Ingredients

Scale
  • 2 lbs red skin potatoes, washed and cubed
  • 3 Tbsp extra virgin olive oil
  • sea salt to taste
  • 1/4 cup fresh chives, chopped (plus a few more for topping)
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes
  • 6 oz can Tomato paste
  • 1 Tbsp Texas Pete hot sauce (or other hot sauce)*
  • Topping options: fresh parsley or fresh chives

Instructions

  1. Soak the chopped potatoes in hot water for 10-15 minutes. Drain and thoroughly dry.
  2. Preheat the oven to 400 degrees fahrenheit.
  3. Dry the potatoes then toss with 2 Tbsp extra virgin olive oil, sea salt and 2 Tbsp chives.
  4. Bake the potatoes 20-25 minutes, until golden brown and easily poked with a fork.
  5. While the potatoes are cooking, make the sauce. In a skillet, heat 1 Tbsp olive oil, 2 Tbsp chives, and about a 1/2 tsp of sea salt. Cook for 1-2 minutes.
  6. Add the smoked paprika, red pepper, and stir. Then add the tomato paste, hot sauce, and 1 1/2 cups of water. Simmer 10-12 minutes.
  7. Remove the sauce from heat and set it aside.
  8. Remove the potatoes from the oven and sprinkle with sea salt to taste. Divide into 4 serving dishes and top with sauce and fresh herbs.

Notes

*If following low FODMAP, make sure the hot sauce does not contain garlic or onion.
