This weekend was another one for the books.  We had friends in town, sipped on cider and wine, took long walks, and really just ENJOYED the weekend.  It was awesome.

The weather cooled down quite a bit and it was even a bit cloudy, which made me realize that summer is sadly coming to a close.  Even still, I’m holding onto EVERY last drop of sun and anything summery that I can.  Like my plants and herbs!

My summer herb garden is out of control, friends.  I water it on the daily and pick a few things about once a week to either toss into salads or experiment with in other meals I’m creating.  While my herbs are doing wonderful, the kale and romaine have seen better days.

You see, I live in an apartment and planted several plants in small balcony planters.  Initially, I thought “the more the merrier!” but after harvesting a TON of romaine and kale this past week only to have it taste too bitter for even ME to enjoy, I think I overdid things at the beginning that didn’t allow the greens to grow to their full potential.  Better luck next time…

Now, I’m just watering the leafy greens like flowers…they are pretty to me! 😉

One thing that has been growing well is my basil (hallelujah!)

I LOVE the flavor of sweet basil, and I think I saw a recipe for a strawberry basil mojito or smoothie or something along those lines and naturally my mind went to guac, because that’s the next thing you all were thinking of with that flavor combo…right?

This guacamole combines avocado, lime, strawberry, basil, chives, and a touch of salt.  You may think it odd that I removed the garlic and the onion, but eliminating those seemingly irreplaceable ingredients makes this dish much more tummy friendly for me.

If you are following a strict low FODMAP diet, or if you are in the elimination phase of the low FODMAP diet, please be aware that avocado is a high FODMAP food if more than 1/8 of an avocado is consumed.  Please be cautious of portion size.

Despite the missing garlic and onion, the chives more than make of for their lack of appearance in this dish.

This dish is super quick to make (perfect for last minute friend gatherings), absolutely delicious, and dare I say healthy? (thank you healthy fats from the avocado!).

Ingredients

Scale
  • 3 Avocados
  • 1 cup quartered strawberries
  • juice of 1 lime
  • 1 Tbsp basil, chopped
  • 2 Tbsp chives
  • 1/2 tsp sea salt

Instructions

  1. In a large bowl, combine the avocados and the lime juice. Gently smash the avocados until desired consistency.
  2. Stir in the remaining ingredients (strawberries, basil, chives, sea salt) and mix until combined.
  3. Serve with your favorite tortilla chips, plantain chips, or vegetables and enjoy!
