Today is a fun day because it’s Recipe Redux Day!

If you are new to the blog – Recipe Redux Day comes once a month.  It is a recipe challenge founded by registered dietitians that focuses on taking delicious dishes and keeping the flavor while bumping up the nutritional quality.  Each month we have a theme to follow to help guide our recipe reduxing, and this months theme is….mocktails and cocktails!

Sparkling Strawberry Mocktail or Cocktail - low FODMAP, gluten free, grain free, dairy free, veganWhen I think of “summer drinks” a particular drink comes to mind that my mom and I used to make all the time in the warmer months!  We would fill a glass with ice cubes, then add in plain sparkling water.  We would top it off with a splash of 100% cranberry juice and then squeeze in lots of lime.  SO refreshing!
The simplicity of this drink and it’s base of sparkling water inspired these Sparkling Strawberry Mocktails or Cocktails.

Another inspiration for this drink came just a few weeks ago when Brian and I had our friends over.  For a fun lunch we made a prosecco cocktail with strawberries and lemon juice that was absolutely divine…of course I thought about recreating this drink with sparkling water and actual measurements so all of you could create the drink too!
It’s very simple to make, and it has the option to add sugar.  Personally, Brian and I both enjoy it without the added sugar but I know that some people have a sweeter palate and adding a little sugar is ok.  I tested coconut sugar and really enjoyed the sweet, slightly carmely flavor that complimented the tart lemon.

Strawberry Sparkling Mocktail or Cocktail

Description

Tis the season of outdoor meal sharing, grilling, and cool drinks. Quench your thirst with this Strawberry Sparkling Mocktail OR Cocktail made from just a few simple ingredients you may already have on hand!


Ingredients

Scale
  • 1 lb (16 oz or 2 cups) frozen strawberries
  • 1/3 cup lemon juice – about 6 lemons
  • 8 cups sparkling water (check the ingredients and make sure nothing is added here!)*
  • 1/4 cup coconut sugar, optional

Instructions

  1. Place the frozen strawberries in a microwave safe bowl. Microwave on the defrost setting until the strawberries are thawed but still cold.
  2. If you don’t have a microwave, place the strawberries in a sauce pan and melt over medium heat. Stir occasionally. Remove from heat once the strawberries are soft and slightly thawed but still cold.
  3. Add the lemon juice to the strawberries (and sugar if using) and blend all together with an immersion blender, traditional blender, or food processor. The strawberries should be mashed and slightly slushy.
  4. Pour about 1/4 cup of the strawberry mixture into each cup and top with either 1 cup sparkling water or 1/2 cup sparkling water and 1/2 cup prosecco.
  5. You could also pour all of the strawberry mixture into a pitcher and top with 8 cups of sparkling water to serve at a party.

*If you want to make an adult version – 4 cups sparkling water and 4 cups prosecco
