This weekend was filled with funΒ and friend time starting on Thursday night. Β  Thursday, Brian and I met friends for dinner and drinks at Livery, a trendy new (new-to-us) Indianapolis eatery a few blocks from where we used to live before we moved to Denver.

The margaritas were absolutely fantastic (fresh, citrusy and not too sweet), and the food had a Latin flair. Β We shared the yucca fries, ceviche, and chicken empanadas and loved every single bite! Β If you are in the area and plan on checking it out, I highly recommend sitting on the roof top. Β The atmosphere is cozy and even in the heat we had an amazing time.

Saturday, we then spent the morning with friends for breakfast at Cafe PatachouΒ before heading to the lake with a couple of other friends for the afternoon.

We were expecting rain storms, but the weather was surprisingly sunny and we had a blast swimming around, jumping off of the boat, and admiring pretty houses along the water.

Sunday morning we went to yoga at Naptown/Practice Indie with Brian’s cousin. Β It was her first class, and she said she really enjoyed it. Β Success!!

It was an awesome weekend seriously packed with friends and fun.

I feel like I have been putting berries on everything lately, and I’ve made a rendition of this salad quite a few times this season so I knew I had to share it with you!

It’s pretty simple to make if you make the spiced nuts ahead of time. Β If you make the nuts right before you want to toss them in the salad, give yourself an hour of cushion so the nuts have time to cool after you roast them.

You could also toss this salad with simple oil, vinegar, salt and pepper or your favorite dressing rather than making the Herby Italian Salad Dressing. Β I’ve done it multiple ways, butΒ my favorite way to enjoy the salad is with the homemade Italian dressing (although it honestly tastes delicious even without dressing!).

I’ve made this salad to serve at summer get togethers several times this year, and it’s always a hit. Β If you are looking for a new dish to share…I promise this one will not disappoint!

As far as substitutions go (other than the dressing), you could easily sub in other nuts for the almonds (I love pecans or walnuts), and you could sub other greens for the arugula. Β It’s totally customizable!

For those with food sensitivities – the amount of avocado and almonds in this recipe should be considered low FODMAP, but due to the fruit in combination with the almonds and avocado, this recipe may be too high in FODMAPs for some so pay attention to how you feel and adjust accordingly. Β This recipe is gluten free, dairy free and grain free.

Description

Sweet summer berries truly make this salad. Fresh greens topped with strawberries, blueberries, candied nuts and avocado make this Summer Berry Salad a winner!


Ingredients

Scale
  • 10 cups loosely packed arugula (you could sub other greens like baby spinach here)
  • 1/4 cup strawberries, chopped
  • 1/4 cup blueberries
  • 1/4 cup spiced nuts, roughly chopped (this recipe makes more than what you need for the recipe, so I put them in an airtight container and save for use at a later date)*
  • 1/2 avocado, diced
  • 3/4 cup Herby Italian Salad Dressing(you will have about 1/4 cup leftover, which is great for using on salads or as a marinade later in the week)

Instructions

  1. In a large bowl, combine the arugula, strawberries, blueberries, nuts and avocado.
  2. Gently toss.
  3. When ready to serve, top with the herby Italian salad dressing.

Notes

*If making the spiced nuts at the same time as the salad, add an hour to the cooking/prep time so the nuts have adequate time to cool before you chop and add to the salad.
Ingredients are added in low FODMAP amounts according to the Monash University app, but because of the combination of FODMAPs in the various foods the overall FODMAP content may be higher. Please pay attention to how your body feels and eat the foods that make you feel the best.
