Before we talk about the delicious Almond Milk Hot Cocoa in this post (scroll to the bottom of the post if you are just here for the recipe!) I want to share details from my weekend.

Friday night, Brian and I stayed in and watched Love Actually and got super cozy with the pups.  We knew we had an early morning on Saturday with puppy school for Rooney.

After puppy school, we went to a puppy play date with Bernie and his littermate siblings Astro and Stella to celebrate their 2nd birthday.  I can’t believe we have had Bernie nearly 2 years!

They all played so hard and it was so adorable to watch.

Once it was dark, Brian and I walked downtown to see the Parade of Lights.  Being bundled up, sipping hot cooca, and looking at Christmas lights really puts me in the spirit.

After having a pretty relaxing day on Sunday, Brian and I headed to Lannie’s Clocktower Cabaret to watch the Denver Dolls and Mister Tim put on their holiday show.  This is the singing group I was at the beginning of the year and over the summer, but since we have little Rooney on our hands right now I opted to skip the holiday season with them.  Even though I missed being on stage, it was still really fun to support the group!

Now about this recipe…

Brian and I have been going to the Parade of Lights for the past 3 years.  I love our little tradition of braving the cold to watch the holiday lights and entertainment as a true start to December and all holiday activities.

The first year we attended, I thought that a cup of almond milk hot cocoa sounded satisfying.  Brian and I went up and down the parade area asking just about anyone if they served the delicious warm drink, and after several “no’s” we finally found a resounding “yes!”  I was so excited, I don’t even remember who it was that ended up having the almond milk hot cocoa.

Last year, I learned my lesson and brought my own hot cocoa.  I made this Hot Cocoa recipe from Against All Grain, and it was so delicious.

This year, I decided to make some adaptations to that recipe to make it my own, and I am SO happy with the end result.

My cocoa is made entirely with almond milk.  Vanilla extract, maple syrup, semi-sweet chocolate chips, and unsweetened cocoa powder are mixed in to make a creamy and sweet chocolatey treat.

Almond Milk Hot Cocoa

Description

Ingredients

Scale
  • 4 cups unsweetened almond milk
  • 1 tsp vanilla extract
  • 2 oz semi-sweet chocolate chips (I preferEnjoy Life brand)
  • 3 Tbsp unsweetened cocoa powder
  • 1/4 cup maple syrup

Instructions

  1. Bring the almond milk and vanilla to a boil over medium high heat.
  2. Once boiling, turn the heat to low and add the semi-sweet chocolate chips, cocoa powder and maple syrup. Whisk until thoroughly combined and all the chocolate is melted.
  3. Pour into 4 cups and serve hot.

Notes

The ingredients in this recipe are low FODMAP but the recipe has not been tested for FODMAP content.
