Yesterday, I made some delicious banana bread! It is moist and very banana-y
I used this recipe and adapted it slightly. I love the “healthified” recipe section on eatbetteramerica.com because they are fun to try and they inspire me to healthify my own recipes. Not being in my own kitchen, I was missing a couple of special ingredients I would have liked to mix in (whole wheat flour, flax, chia seeds). But it is still tasty!
|1 Heat oven to 350°F. Grease bottom only of 8×4-inch or 9×5-inch loaf pan with shortening, or spray with cooking spray. In medium bowl, mix flour, baking powder, baking soda, salt and cinnamon.|
|2 In large bowl, beat sugar, oil, egg whites, bananas, milk and vanilla until well blended. Stir in flour mixture until well blended. Stir in walnuts. Spoon into pan.|
|3 Bake 8-inch loaf 55 to 62 minutes, 9-inch loaf 45 to 52 minutes, or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan to cooling rack. Cool completely, about 1 hour, before slicing.|
For breakfast this morning I had yet another smoothie…the same kind as yesterday! It really hit the spot again 🙂
Today, on my schedule for the half marathon, I am running 3 miles and strength training by teaching Core Intensity. Should be a great day!
