Can you believe Halloween is in 4 days?!

While I won’t be trick-or-treating this year, I will be celebrating and spending time with friends and (BONUS!) Brian’s parents will be visiting.

Not too long ago, my friends over at Love Grown Foods sent me their first-ever limited edition Halloween Cereal, Bats and Boos!

This cereal is wheat-free, corn free and totally delicious.  Seriously.

Because Brian and I aren’t really cereal eaters, I thought I would put the tasty sweet cereal to use in a yummy TREAT recipe inspired by the classic rice krispy treat. (Because we are treat eaters!)

These cereal treats are so sweet and crisp and kid and husband approved 😉

Instead of using marshmallow and butter to hold the cereal together, I used brown rice syrup, coconut oil and almond butter making these delish treats a healthier alternative, free of refined sugar, and vegan-friendly 🙂

Description

Delicious cereal (made from beans!) pairs perfectly with a sweet mixture of brown rice syrup, coconut oil, and almond butter to create a delicious refined sugar free treat that please everyone!


Ingredients

Scale
  • 4 cups Love Grown Bats & Boos Cereal
  • 1/2 cup brown rice syrup
  • 1/4 cup coconut oil
  • 1/4 cup almond butter (I use the natural kind that you have to stir)
  • 1 tsp vanilla
  • 1/4 tsp salt

Instructions

  1. Spritz an 8×8 baking pan with coconut oil cooking spray or line with wax paper.
  2. In a saucepan, melt the brown rice syrup, coconut oil and almond butter until slightly bubbling.
  3. Remove from heat and add the vanilla and salt. Stir until thoroughly combined.
  4. In a large bowl, combine the cereal and the brown rice syrup mixture.
  5. Press the cereal mixture into the prepared 8×8 pan and allow to cool in the fridge for at least 1 hour.
  6. Enjoy!
