    A little meal prep goes a long way! At least in ou A little meal prep goes a long way! At least in our house, spending about an hour of batch prepping some food a couple of times a week helps to expedite breakfast, lunches and snacks. 

Today, I prepped energy bites for myself (on my sure!), cinnamon roasted apples for the girls, miso tofu and vegetable curry for Claire.

Made with fiber-rich whole grains, chia seeds filled with omega-3 fatty and deliciously sweet bananas this breakfast has been on repeat in our house.

I usually make a batch on the weekend then store in the freezer to eat throughout the week!

    Fish Tacos! 🌮 I LOVE this fish taco recipe, b Fish Tacos! 🌮 

I LOVE this fish taco recipe, but haven’t made it in forever because…cooking with a toddler has me thinking VERY differently than cooking solo. 😂 

I’m adding these to a weekly meal plan in the future because Marie would be so helpful with making the seasoning mix and making the sauce. Dumping and mixing are two cooking tasks Marie has mastered! (And taste-testing 😉)

I can chop the veggies ahead of time, and fish cooks quickly…ok, this recipe needs to be made sooner rather than later around here.

    Tuna Salad with Avocado and Lemon 🍋 Simple, vib Tuna Salad with Avocado and Lemon 🍋 Simple, vibrant, bright and fresh! This meal is perfect for lunch for the entire family. 

When I make this recipe for Claire, I just make sure to use no salt added tuna. Tuna is a nutritious lunch option because it contains protein and omega 3 fatty acids, avocado has nutritious fat and fiber, and lemon is a source of vitamin C.
