Welcome to Grill Week 2016! Β This week, I’m only going to be posting recipes that you can a) GRILL b) serve at a cookout or summer potluck c) eat as a component of a grilled meal.
When the weather is nice, I adore eating outside, cooking outside, and really being outside as much as possible, and with Memorial Day right around the corner (ada the first official cookout party day of the year) I thought I would provide some delicious inspiration for your grilling festivities.
First up are these Chicken Avocado Burgers.
I’m just like the rest of you when it comes to weeknight meals (or really any meal!) I want something that is ready fast, doesn’t require too many ingredients (although sometimes I’m willing to make an exception), and is absolutely delicious. These chicken avocado burgers are so IT!
A blend of lean ground chicken, avocado, flavorful chives, smoked paprika, and chipotle pepper, they can be on your table in under 30 minutes, and they are totally repeatable for lunches and dinners later in the week. Β Sounds too good to be true? Trust me on this oneβ¦everything is true.
Adding the avocado makes these chicken burgers moist (I apologize for usingΒ thatΒ word) and adds a boost of healthy fats to the meal.
I enjoy these burgers all on their own, but if you like to dress your burger with all the toppings I recommend topping with a slice of sharp cheddar (if dairy is your thing), a bit of salsa, and some romaine lettuce. Β Bun optional.
Finally, for anyone with dietary restrictions – this burger is dairy free, gluten free, grain free, paleo-friendly, whole 30 approved, and 100% delicious.

Ingredients
Scale
1 lb ground chicken
1 ripe avocado, smashed*
1 Tbsp chives
1 tsp smoked paprika
1/4 tsp chipotle pepper
1/4 tsp salt
1/8 tsp black pepper
Instructions
Heat a grill or grill pan to medium-high heat.
Combine all ingredients in a bowl until thoroughly combined.
Form the mixture into 6 patties that are relatively the same size.
Spritz a large piece of foil with non-stick cooking spray.
Place the burgers on the prepared piece of foil.
Place the foil with burgers on the heated grill or grill pan and cook the burgers for 5-6 minutes on each side, or until they have an internal temperature of 165 degrees fahrenheit.
Notes
Please note that 1/8 of an avocado is low FODMAP. If in the elimination phase of the low FODMAP diet or sensitive to avocado, use a very small avocado, or 3/4 of an avocado. Please listen to your own body and eat the foods that make you feel the best.
