My goodness!

Any bachelor fans out there?  I must say, this is the most “invested” I have ever been in a bachelor/bachelorette season, but the finale last night?  Weird is the only thing I have to say about it…

Other than that, yesterday was a great day!

Mondays are my day to eat breakfast at home and I was craving a smoothie yesterday morning.  I feel like it has been forever since I last had one, so I whipped up a blueberry spinach smoothie with some Perfect Protein powder to give it some extra staying power.  Man did it hit the spot!

Lunch was a giant and delicious salad full of spinach and romaine topped with sweet potato, carrot, tomato, avocado, and hard boiled egg.

After work, I taught Bodypump and CXWORX then grabbed all thousand of my bags (for some reason I feel the need to carry every.single.thing. with me at all times) and Brian and I hurried home to catch the finale of the Bachelor.

While watching the Bachelor, Brian enjoyed a snack and I enjoyed a plate full of veggies, cauliflower rice, and some hard boiled eggs.  Simple, but hit the spot!

Now, tonight’s dinner?

It’s going to be a repeat of a meal we had last week:

It turned out so well the first time, I decided to make it again and share the recipe with you!

This was my crockpot meal this week, so if you have a busy week coming up or you aren’t in love with cooking this is a great option for you.  Definitely a “set it and forget it” type of meal that doesn’t require much thought.  Just toss all the ingredients in the slow cooker and call it a day!

While it is simple, this meal calls for lots of spices which make it SUPER flavorful.  Brian’s dad got us some pretty cool ;ess common spices as a wedding shower gift and I finally found a chance to use the tumeric and cardamom pods:

A little note about the cardamom: those little pods add great flavor, but make sure you don’t eat them as you are eating the meal.  I even went as far as pulling them out before serving the meal to avoid accidentally chomping on one 🙂

Chicken Sweet Potato Spinach Curry

Ingredients:

  • 2 sweet potatoes, chopped
  • 1 lb chicken
  • 2 cups water
  • 2 handfuls of spinach
  • 1 cup canned, diced tomatoes (drained)
  • 1/2 cup coconut milk (canned)
  • 1 onion
  • 1 clove garlic, minced
  • 3 Tbsp coconut oil
  • 3 tsp curry powder
  • 1 tsp ginger
  • 1 tsp cumin
  • 1 tsp dry mustard
  • 1 tsp tumeric
  • 1 bay leaf
  • 1 tsp cinnamon
  • 1 tsp salt
  • 10 cardamom pods

Directions:

  1. Place all ingredients in the slow cooker.
  2. Turn it on high heat and allow to thoroughly cook.
  3. Before serving, make sure to remove the bay leaf and cardamom pods.
  4. I enjoyed mine over cauliflower rice and Brian enjoyed his over brown rice.  Both ways are delicious!

  1. If the dish is as good as you say, i could careless how many spices I need to have on hand. It looks and sounds delicious. I mean really any recipe involving sweet potatoes has a huge spot in my heart LOL
