Description

Crisp apples, tangy goat cheese, fresh greens, and crunchy pecans come together to make my favorite Fall Apple Salad.


Ingredients

Scale

For the Salad: 

5 oz spring greens or baby spinach

1 large apple, cored and chopped

¼ cup dried cranberries

¼ cup toasted chopped pecans

⅓ cup goat cheese, crumbled (about 2 oz)

For the dressing:

¼ cup extra virgin olive oil

1 tablespoon apple cider vinegar

1 teaspoon maple syrup

1 teaspoon dijon

¼ teaspoon salt

Dash black pepper


Instructions

  1. In a large bowl, toss together the greens, apple, cranberries, and pecans. 
  2. In a separate smaller bowl, whisk together the olive oil, apple cider vinegar, maple syrup, dijon, salt and pepper. 
  3. Just before serving, toss the salad with the goat cheese and the dressing.

Notes

You can prep the ingredients ahead of time and add the dressing when you are ready to serve.
