This morning started out with a yummy bowl of cottage cheese topped with frozen cherries, blueberries, bananas and a delicious nut and dried cranberry mixture for some added crunch.

I enjoyed this meal…at my parent’s house!

After packing our bags and teaching Bodypump, Brian and I hit the road and headed up North to spend the weekend with my parents in Fort Wayne.  I packed a nice and tasty lunch to go comprised of carrots and celery with peanut butter (always a fav!) and a black bean burger….delicious!

We arrived at my parent’s around 2:30pm and almost immediately headed to the pool.

It was our first pool day this summer, and the last weekend the pool will be open this year…oh well!  At least we were able to enjoy it for one day.

After the pool, Brian and I ran some errands and then came home to make a fun dinner out of one of my cookbooks!

My entire family (minus Brenna, my sister who is not visiting this weekend) got together in the kitchen and experimented with rice paper to make fresh rolls.

It was quite the process to get the flimsy little rice papers NOT to stick to the plate, or itself…but it definitely made things fun and interesting 🙂

We loaded our spring rolls with tofu, lettuce, bell pepper, carrots, cucumber, cabbage, cilantro, and bean sprouts, and topped it with Averie‘s Thai Peanut Sauce (recipe in the cookbook.)

I really enjoyed these rolls, as they tasted extremely fresh, they were fun to make, and they filled me up but didn’t weigh me down with a “stuffed” feeling.

We had plenty of rice paper leftover, and mom is letting me take it home!  I can’t wait to make my own spring rolls 🙂 (Or should I say “fall” rolls??)

Today, I am planning on running, golfing with my parents, and really just relaxing.
