Hey! It’s finally Friday 🙂 And the last Friday of January…hope you had a great first month of 2015!

This week, the weather here in Denver has been sunny and crazy warm (so sorry about all of the folks with blizzard weather!!), but this weekend it’s actually cooling off and expected to snow…which I’m kind of excited about 🙂

Brian and I actually have something really exciting happening this weekend…but I’m going to wait to tell you about it on Monday!  And I can’t wait to tell you!

Something I CAN tell you is that tonight, we are going to check out a new to us restaurant that has been highly recommended:  Sushi Den!  It’s been a LONG time since either of us have had sushi so we are pretty excited!  I’ll let you know what we think!

 Five Things I Ate:

  • Quinoa Veggie Patties with a side salad.  These were so amazing!! I love the addition of turmeric 🙂

  • This dinner salad…seriously, it was good enough to be a restaurant salad.  I tossed tuscan (dinosaur) kale and romaine with a mixture of balsamic vinegar, dijon mustard, walnut oil, salt and pepper then topped it with strawberries, blueberries, pecans, and roasted chicken.  Yum! It was so springy with all that fruit on top!

  • This little combo…another delicious meal if ya ask me!  Poached eggs over sauteed kale and quinoa.  Don’t ask questions, just try it 🙂

  • Macadamia Nut Butter!  It was so tasty 🙂  Now, I’m trying to think of how I can use it in a recipe…

To start, I topped my coconut flour pancakes with it 🙂

  • I made coconut flour tortillas and had a little taco!  They were a little hard to make at first, but by the end (literally…the very last one) I got the hang of it!

Coconut flour tortilla filled with salmon, cabbage, tomato and Texas Pete hot sauce with a side of roasted zucchini, butternut, green beans and parsnips.

Five Workouts I Did:

  • Taught Bodypump
  • Taught a boot camp class
  • Indoor cycling
  • Hot yoga
  • Went for a run outside and foam rolled after…

Five Things Making Me Happy:

  • You guys!! I love seeing you try my recipes and post them to facebook, instagram or whatever social media outlet you love 🙂  Seriously it makes me smile a LOT!  I’m always open to feedback if you try them out…so please let me know!

  • Beautiful fresh flowers! I am such a sucker for sunflowers…couldn’t pass these beauties up!

  • I tried a new-to-me grocery store:  Sprouts!  and I loved it.

Look at the selection of nut butters…a little overwhelming, but awesome at the same time.
