Hello and happy Friday!
I am so happy it’s practically the weekend! (As always!)
This week really wasn’t too crazy at work, but it did seem to go by pretty fast, which is great because Brian and I are headed up North to my parent’s house this weekend. Can’t wait!

Kale Artichoke Frittata. This is a spin off of my Spinach and Artichoke Frittata, but the small couple of changes I made to the recipe make it taste TOTALLY different and really good 🙂
Although this week wasn’t super crazy work-wise I was busy in the evenings, so last night I finally had a relaxing meal at home on real plates with Brian. OH! And it wasn’t a reheat and eat type of meal. It was quick, but I made it last night right before we ate it 🙂
Spaghetti squash mixed with Sundried Tomato Kale Pesto topped with asparagus and shrimp.
Chicken. I’m kind of on again off again with meat and after reading lots about the benefits of a varied diet, getting protein from multiple sources, some down-sides to ONLY eating fish, and reading up on things like tofu I decided to add some organic, free-range, white-meat chicken back into my diet this week.
Specifically, I made this Brazillian Curry Chicken from PaleOMG and it was amazing! Served it over cauliflower rice with some roasted veggies on the side.
My usual breakfast: Frittata, sweet potato, and fruit topped with some nut butter. So good!
Butternut squash fries! I forgot how good butternut squash fries are. I am definitely picking up another squash this weekend.
At the gym I work at, we used to offer a barbell club that was a technique class for Olympic Lifting. A couple of the girls that I work with were part of the club, and now they have decided to continue to practice their lifting on their own. It looks like a lot of fun and it’s TOTALLY different from anything I have ever done, so this week I decided to join them!
(OK, so I’m not quite there yet…)
I am absolutely loving it! Most of the workout is stretching, warming up the muscles and working on mobility and it just feels so good! I can’t wait to keep working on my technique as I continue to add this new-to-me workout to my rotation. So fun!
OMG…that’s almost all I can say about this nut butter.
Last week, Clare introduced me to Onnit as she reviewed their protein powders and some of their nut butters, one of them being something called Walnut Almond Cashew Trilogy Butter. OK, that Trilogy Butter sounds absolutely amazing and I had all 3 of those nuts on hand so I decided to make some. WOW is that stuff good!
I just combined 1 cup of each nut, blended in the food processor until a nut butter formed, and VOILA! My new favorite nut butter…seriously, try it. 🙂
Double date night last weekend!
For Valentine’s Day, Brian and I went out to dessert and then on Saturday we hit up the Indiana Repertory Theatre for a play. It was so fun to have two special date nights in one weekend. Green Tea.
Have I been living under a rock or what?
Brian has been on a serious tea-drinking kick lately so I thought I would try some green tea. I had a little one afternoon to warm me up because I was absolutely freezing and not only did this tea warm me up, but it gave me a serious energy boost like better than coffee!! I LOVED the feeling and it tasted so good 🙂
Seriously, I think I’m addicted now…
