Morning and happy April!

This week went by fast, but felt long all at the same time.  Much like last week, I have been studying my little heart out and just check check checking things off my neverending to-do list.  For a Type A personality like me, sometimes there is nothing more satisfying than a good cross off the ole to-do list.

This weekend will be much the same as last weekend (full of text books, highlighters and note taking), but Brian and I do have an Easter celebration planned with our family of friends on Sunday.  I’m in charge of apps and dessert, so in between study sessions I’ve had fun pinning delicious looking food!  Always a great way to spend time while not studying, right?

Anyways, I hope you all have a great weekend full of family, love, and some fun 🙂

Five Things I Ate:

  • Overnight oats…it’s been a LONG time since I had these and I still love them! Because of the whole low FODMAP thing I just made these with a combo of chia, super oats and coconut milk with mix-ins of cinnamon, banana, and PB.

These were eaten with a side of statistics notes in my car right before my exam yesterday 🙂

  • Breakfast for dinner (always a great idea):  scrambled eggs, roasted potato, sauteed zucchini and spinach.

  • Basic dinner of shrimp, brown jasmine rice and green beans (SO many green beans!)

  • Overnight oats…in a jar! Thank goodness for empty nut butter jars 🙂

Five Workouts I Did:

  • Taught Bodypump
  • Taught Bootcamp
  • Hot yoga (felt SOOO GOOD!)
  • 4 mile run
  • Tabata
  • Planning on doing lots of walking and maybe a little at home yoga this weekend 🙂

  • Being SO close to being done with these classes.  I can’t wait!
  • Seeing you guys make my recipes 🙂  Seriously, I can’t explain how excited and happy it makes me when I see someone try a recipe and enjoy it! Thanks for the shoutout, Gabe! Totally made my day 🙂

  • Hot yoga!  It’s been months since I have taken a hot yoga class and since I have added some running back into my workout routine and with the stress of finals my body NEEDED it bad.  So refreshing.
  • Shorts and sunshine (yes it totally snowed last night, but wearing shorts earlier in the week was fantastic!)
