I am super pumped for this weekend, because it’s a long weekend and we have lots of fun things planned. Brian and I are planning on checking out the Taste of Colorado, some sales on ski gear and outerwear (these sales are a HUGE deal out here!), and doing our first 14er hike. (That would be a hike that goes up to 14,000 feet, not a hike that is 14 miles….which is what I thought for quite some time!)
With the long weekend upon us, I hope you have something fun planned to! Any cookouts? Parties? Fun workouts planned? Whatever you are doing, I hope you enjoy it!
I am so totally in love with these unsweetened almond milk lattes. The milk is so creamy and frothy. I have a milk frother, but it does nothing compared to this beautiful and delicious drink.
Smoothies with cacao nibs! They add a nice little crunch 🙂 The cacao nibs have a slightly bitter taste and kind of taste like chocolate covered espresso beans to me. These little nuggets of goodness are full of antioxidants, vitamins, and minerals so they boost up the nutrients of the smoothie too!
1 frozen banana, almond milk, Vega Vanilla Protein Powder, 1 tsp almond butter, big handful of spinach, cacao nibs
Lunch time salad: Cauliflower lentil burger, spinach, romaine, tomatoes, sprouts, onion, celery, sweet potato, dijon mustard, and white wine vinegar.
Scrambled eggs and spinach with sugar snap peas, bell pepper, celery, and carrots with hummus
Paleo Pad Thai from Clothes Make the Girl with almond butter instead of sunbutter, Braggs Liquid Aminos instead of coconut aminos, and shrimp instead of chicken. Holy Moly…this was GOOD! I can’t wait to make it again 🙂
Evening walks. Brian and I both do quite a bit of sitting throughout the day (as I’m sure most of us do!) so to make sure Brian and I get our steps in for the day, we have been taking after dinner evening walks. I love spending the time away from the computer screen and TV, and I love getting moving in the evening. It’s definitely making me happy.
I get to teach Bodypump and CXWORX this weekend and I couldn’t be more excited! I am a tad bit nervous because I have only taken one Bodypump class in the past few weeks, but I think I’ll be ok. Wish me luck!
Thinking about the holidays. I’m totally not ready for the holidays or the fall season yet (weird I know! I’m probably the only one not ready…) because I’m still in love with summer, but thinking about the cooler weather, soup, baking, and pumpkin everything is bringing up some good memories 🙂
Using my Nike Fuelband. A friend gave me her Nike Fuelband over a year ago because she wasn’t using it, and I didn’t even start using it until this week…but I love it!! It’s really helping me make a conscious effort to get up and move in the middle of the day and make sure I get my 10,000 steps in each day in addition to getting my workout in.
I know I mentioned it above, but the three day weekend is making me pretty darn happy!
I love almond milk lattes but they are so hard to find in Ohio! I have never tried cacao nibs before but I have seen them all over and would love to try them!

You gotta try the cacao nibs, they make a smoothie kind of like a Java Chip Frappacino 🙂
