My goodness! This weekend was fun (despite the Butler loss!) but it went by much too fast.
Brian and I spent the morning running errands on Friday and then spent our night watching the Butler game with SO many Butler fans. It was a fun change from our much more intimate group in Denver.
Saturday we then helped a friend move into her house that is only a mile from us and then we caught up on How to Get Away with Murder. Does anyone else watch that show? It sucks me in every time!!
We then spent Sunday going to church, cleaning, and prepping for the week (I honestly like doing those things!!).
As I was packing Brian’s lunches for the week, I started to think about how much I don’t really mind the chore yet Brian loathes it….
So, who loves packing lunch!?
(slowly raises hand…)
OK, I’ll be honest in saying that I really do enjoy packing lunch if I can do it in a leisurely way and if I have the main items prepped already. There is something satisfying about packing a delicious and healthy lunch ready to go for the next day.
On the other hand, I don’t really LOVE it when I’m scrambling, it’s late at night, or there aren’t obvious lunch options.
Anyone else in the same boat?
To help myself and all of you, I talked with a bunch of my internet friends and came up with this giant list of healthy packable lunch recipes.

Yep, if I need to pack a lunch, even as a kid, thought about it the night before so I was prepared, or more likely, just made it the night before! Now…I rarely get to each lunch so…that’s not great. However, if I did get lunch, I would still be thinking about it and getting it ready the night before! I love a lot of the ideas on this round up. Thanks for including one of mine!
You rarely eat lunch!? I’m so sorry!! I would be one angry girl without lunch!
HANGRY**** 😉
Love all these ideas! Packing lunches usually leaves me feeling stressed or panicked and packing at the last minute. Love that most of these can be packed ahead of time!
Yes! Make them ahead of time and then portion them out throughout the week. No need for stress 🙂
I’m all about salads and power bowls for lunch, but I want to try that mason jar lasagna! And I could totally get on board with adult lunchables 🙂
I agree!! I totally default to power bowls with random stuff from the fridge, but these are WONDERFUL ideas!
I can always go for some new lunch ideas — I genuinely love packing lunch too… but I think there’s only a few of us!
Yay for lunch packing! 🙂
