Can I just tell you how excited I am that it is no longer winter?! Don’t get me wrong, when it’s snowing and pretty outside the winter can be wonderful and fun, but I am a warm weather girl at heart so spring to me means warmer weather and blooming plants. 🙂
This weekend, Butler had another win in all of the March Madness. Brian and I are pretty excited about that, and we are making all of our plans around the Butler game this Friday.
Another fun thing from the weekend…we went to see Beauty and the Beast! It was amazing. As a classically trained vocalist, I’ll be honest in saying I can be a tough critic when it comes to seeing some performances, but I thoroughly enjoyed this rendition of one of my favorite Disney movies.
We got more furniture painted, cleaned the house, walked the dogs, met our neighbors, and went to dinner at Open Society. Even though it went by much too fast, it was still a wonderful weekend.
I also made French fries!
Let’s talk about these French fries.
We don’t make them everyday in our house, but I do make them probably once a week to go along with our dinner.
Believe it or not, potatoes are pretty darn nutritious. They are packed with vitamin C, potassium, vitamin B6, magnesium, fiber and resistant starch.
Not only are they packed with nutrition, but they are super comforting and they are one of Brian’s favorite foods!
Making baked French fries as delicious as the restaurant kind can be a bit of a challenge, but I have found that patting the sliced potatoes dry with a towel or paper towel before seasoning and baking them really allows the outside to get brown and slightly crisp while keeping the inside nice and fluffy.
These take about 30 minutes to make from start to finish, so I typically like to make them when I have other things to roast or bake in the oven. That way, the items can bake together and everything is done around the same time. Having that 25 minutes while all or most meal parts are in the oven allows me to clean up before dinner, play with or train the dogs for a couple of minutes, prepare Brian’s lunch, or toss a salad together for a quick side.

2 medium to large potatoes, rinsed and dried
2 Tbsp extra virgin olive oil*
1/2 tsp sea salt
Preheat the oven to 400 degrees Fahrenheit.
Cut the potatoes into about 1/2 inch wide French fry shapes.
Pat the cut potatoes dry with a towel or paper towel and spread on a lined baking sheet.
Drizzle with olive oil and salt. Toss all together with your hands to make sure all parts of the potato are covered.
Bake for 25-30 minutes, or until they are golden brown.
