I did something last night that I have been wanting to do for so long.

whole foods dinner 2Brian and I got our dinner from the food bars at Whole Foods!

Brian had his meal from the hot food bar, I got mine from the cold food bar. I built a large salad of romaine, spinach, tofu, roasted edamame, red onion, green onion, roasted garlic, and cucumber.  It was absolutely delicious and totally worth the arm and the leg that it cost!

whole foods dinner 3I also had a little side of garlic and basil squash and some chili roasted sweet potatoes.  Yum!!

whole foods dinner 1I had been battling a headache all day, so Brian and I just sat on the couch, watched some TV, and chilled.  Boy, was that nice!!

arctic zeroWe were in bed by 9:30am on a Friday night.  Call me old and boring, but it sure felt great to get the sleep my body needed!

Breakfast

Today is a pretty special day.  It is National Banana Bread Day!  In honor of this American Foodie Holiday 😉 I decided to get creative with my oats this morning to replicate the delicious flavors of banana bread.  Boy, was I successful!

These oats had a nutty flavor from ground flaxseed, were silky smooth, and very satisfying.  I can’t wait to make them again 🙂

Banana Bread Oats

Yields: 1 Serving

Ingredients:

  • 1/2 cup oats
  • 1 cup water
  • 1/3-1/2 cup egg whites
  • 1 Tbsp ground flax seed
  • 10 drops of vanilla liquid stevia (or a packet of stevia with a dash of vanilla extract)
  • a small splash of nut and butter extract
  • a sprinkle of cinnamon
  • 2/3 chopped, frozen banana
  • 1-2 Tbsp chopped pecans

Directions:

In a large, microwave safe bowl (too big to eat the oats out of) place the oats and water.  Microwave on high for 2 minutes.  Next, add in the egg whites, flax seed, stevia, nut and butter extract, and cinnamon.  Stir to thoroughly combine.  Microwave for 2 more minutes.  Finally, add in the banana and microwave for 1 more minute.  Pour this mixture into a smaller bowl to serve and top with pecans.  ENJOY!

    My husband and I have talked for YEARS about eating dinner at the whole foods bar! lol. We have yet to do it. And now the closest Whole Foods is 40 minutes away! Someday though! Looks like you had fun! and great looking recipe too!
