When I heard the word “tapas” I immediately thought of a wonderful restaurant back home in Indiana called Barcelona Tapas. Way back when Brian and I were very new and not even officially “dating” we went on a date to this delicious small plate eatery. While ALL of the dishes were fabulous, the one dish we always get? Patatas Bravas. Roasted potatoes in a spicy tomato sauce. Of course, I had to attempt to make my own!
Several recipes for patatas bravas I found called for fried potatoes (or should I say patatas), so I opted to roast mine in the oven to get a nice crispy texture on the outside and soft fluffy center on the inside.
Also, lots of onion and garlic are typically used in this dish, so I opted for fresh chives to give the dish a ton of zippy, fresh flavor.
One trick I need to mention….soaking the potatoes in hot water then thoroughly drying prior to baking. This allows the potatoes to get that super crispy outer texture. It basically makes them even more delicious! (You can also do this when making homemade baked french fries!)
Now that we can have our very own patatas braves at home, I’m kind of thinking I need to whip up a whole tapas menu! Hmmmm…!
