Recently, I feel like I’ve been trying to keep my weeknight meals lively all while spending as little time as possible in the kitchen.

Yeah, things have been busy around here this summer with my summer semester nearing an end (next week!), family visiting, enjoying time with friends, and exploring the glorious state of Colorado I just haven’t had time to spend hours scouring cookbooks and the internet for creative meal inspiration, prepping food for the week, and then cooking it after a long day of studying or doing whatever else it is that I do.

I feel like many of you can relate to this situation…right?

To keep my creativity flowing and stress levels low, cooking and preparing food is so therapeutic for me, I’ve been experimenting a lot with flavors that are familiar but in new combinations.  I’ve also been turning to my grill quite a bit more frequently than usual.

Honestly, now that I’ve kind of got this whole grill thing figured out I feel like I want to use it all.the.time.  I don’t know what took me so long to get over my fear of using it!

When I think of family memories in the summertime, my mom and dad were ALWAYS making our summer meals on the grill.  They would grill chicken (with lemon butter garlic sauce of course), fish, vegetables, ears of corn, PIZZA, you name it and they were putting it on the grill.

Thankfully, I’ve learned that using the grill is a fun and easy way to make a quick and interesting dinner when time is tight in the evenings 🙂

Now, let’s look at these kabobs (totally thought that word was spelled kebobs…).

They are coated in pesto (I used homemade, but you can use your fav store brand to save even more time), then I alternated chicken and cherry tomatoes on the sticks, plopped them on the grill until the chicken had the internal temperature of 165°F and voila! We had ourselves the main portion of a meal!

To round out the meal, I served these kabobs with a side salad and some roasted potatoes.  These little kabobs are packed with flavor, EASY, and good for you too 😉

For those with food allergens/specific dietary needs: this recipe is gluten free, grain free, and if you use a homemade pesto it can also be low FODMAP, paleo-friendly, and dairy free!

Vibrant, fresh pesto adds a delicious flavor to kabobs of chicken and tomato making this a powerhouse (and super simple!) weeknight summertime meal.


  • 2 chicken breasts, chopped into walnut sized pieces
  • 1 Tbsp pesto (if you are looking for a low FODMAP option, make my homemade version!)
  • 1 cup cherry tomatoes, rinsed and dried


  1. If using wooden skewers, soak for at least 30 minutes in water to prevent the ends from catching fire.
  2. Preheat your grill or grill pan to medium high heat.
  3. While the grill is heating, place the pieces of chicken in a large plastic, zip-top bag with the tablespoon of pesto.
  4. Shake the bag until all of the chicken is coated in pesto.
  5. Place the chicken on the skewers alternating with tomatoes.
  6. Place the chicken on the grill and rotate every 4 minutes.
  7. At about the 10 minute mark, begin to check the internal temperature of the chicken. These will be done when the chicken reaches an internal temperature of 165 degrees fahrenheit.


This recipe has not been tested for FODMAP content, but ingredients are used in amounts compliant with the Monash University App and guidelines. Please eat the foods that make you feel your best!
