2 cups water
1 cup oats
1 banana, smashed
1/4 cup pumpkin puree
2 eggs, lightly scrambled
1 tablespoon chia seeds
1 teaspoon pumpkin pie spice
½ teaspoon vanilla extract
Optional, 2 tablespoons maple syrup or coconut sugar
Bring the water to a boil in a medium pan.
Mix in the oats, smashed banana, pumpkin puree, eggs, chia seeds, and pumpkin pie spice. Stir until combined and thick.
