I am seeing signs EVERYWHERE that fall is in the air πŸ™‚

Saturday morning, while I was running I spotted this little gem growing in someone’s front yard!

Saturday night we went to our friend’s soccer game (he plays for the Switchbacks) and it was a crisp evening that just felt so fally. Β I loved it!

To celebrate FALL I wanted to share a super simple recipe for some tasty little snack bites that don’t involve a food processor, blender, oven, or any other fancy kitchen equipment. Β Just a bowl and a spoon!

Pumpkin Spice Snack Bites from Treble in the Kitchen

The star ingredients in these bites are:

Pumpkin |Β high in fiber, beta-carotene, and potassium

Almond ButterΒ |Β may reduce risk of heart disease, rich in magnesium

Flax Meal |Β high in manganese, vitamin B1, omega 3 fatty acids

Sunwarrior Protein PowderΒ | plant based protein comprised of brown rice, pea, quinoa, chia, and amaranth protein

Description

Pumpkin, almond butter, and plant based protein combine to make a delicious and EASY snack bite to fuel your day.


Ingredients

Scale
  • 1/2 c pumpkin puree
  • 2 Tbsp maple syrup
  • 1/3 c almond butter warmed slightly to make it extra drippy
  • 1 1/2 cup oats
  • 1 scoop vanilla Sunwarrior Protein
  • 3 Tbsp Flax meal (ground flax seed)
  • 2 tsp pumpkin pie spice

Instructions

  1. Combine all ingredients in a large bowl.
  2. Mix until combined.
  3. Roll into balls of desired size and store in the refrigerator or freezer.
  4. Enjoy!

Notes

If your hands get really sticky while rolling these into balls, simply get your hands slightly wet. This will eliminate mess and make the balls much easier to roll!

    • So sorry you can’t do Brown Rice Protein! I bet you could add in some coconut flour instead (or almond meal if you can’t have that!) If you try them, let me know your modifications!
