Yesterday, I had big plans.  I had big plans to start the day with mass, go to the new Earth Fare store, attend the Williams Sonoma Thanksgiving sides technique class, and make place cards for the sales meeting on Wednesday.  Thankfully, I was able to fit it all in!

I started the day with a delicious bowl of pumpkin oats.

  •  Oats
  • Pumpkin
  • Egg Whites
  • Banana
  • Stevia
  • Cinnamon, Cloves, and Ginger
  • Peanut Butter
At church, the Christmas giving tree was out.  Brian and I picked a name off of the tree to buy a gift for.  The person we picked ended up being a little 1 1/2 year old boy that likes blue named Kameron.  On his wish list:  an outfit.  Brian and I had so much fun shopping for his little blue outfit after church!!  This kid will definitely be stylin’ 😉

 

We also stopped for  a little Starbucks treat, and I got my new favorite:  nonfat cappuccino with pumpkin spice.   So good and literally 39 less grams of sugar than a traditional pumpkin spice…!

We then headed to my beloved Earth Fare and picked up some fun odds and ends to try in the kitchen.  We also scored two free tote bbags!

Then, it was time to head to Williams Sonoma.  I absolutely adore everything in and about Williams Sonoma and cannot wait until I have my own house to host a delicious Thanksgiving dinner in for all of my family.

The technique class yesterday focused on Thanksgiving sides.

We were able to sample some delicious mashed potatoes, stuffing, and butternut squash risotto.  They were all tasty and worthy of taking note of the recipe.

After a day of being out and about, Brian and I came home to tackle some things on the to-do list which included a bit of crafting.

On Wednesday, my company has an all team sales meeting.  We are hosting it at one of the hotels that I work at, so I volunteered to help with the decorating.  These little place cards were so simple, and I think that they really give a festive look to something so sharp looking.

I simply hot glued an already made place card to a pine cone and glued a little leaf on it.  Cute!

While I was busy crafting, Brian’s mom made me a delicious dinner of salad and Greek yogurt.  The salad had tangerines, pumpkin and sunflower seeds, spinach, cauliflower, celery, zucchini, and carrots.  I barely needed dressing because of all of the flavors going on in there!

The real start of my meal was the little Greek yogurt mixture she made me.  It was simply Greek yogurt with stevia, banana, orange zest, chopped almonds and cinnamon.  It was so good!  I will definitely make it again 😉  Thanks Kate!

Saturday, I was pretty busy getting my bake-on in the kitchen, and in addition to some other treats, I made my first pumpkin roll!

Kate brought home a Holiday Baking Cook’s Illustrated cook book last weekend with this roll on the front cover.  She asked if I could make this pumpkin roll, and although it has been years since I have even attempted to make a roll like this, I said YES!

It was a fun challenge, and surprisingly not too difficult.  We all tried the cake last night, and it seriously tasted like something from a bakery!  We all decided this would be good to have as a treat the day before Thanksgiving, so it looks I will be making another very soon.

I absolutely LOVED how fall and holiday my weekend was 🙂  It has really put me in that holiday spirit.

  1. Oh my the pumpkin roll!

    This weekend we got all of our deck furniture and outdoor curtains, etc. down for the winter. I already can’t wait for Spring so we can set it up again.

    I am ready for the holidays’ though and will be putting up the Christmas tree this week. I know, I know lol

    • The pumpkin roll was delicious! It is always sad to put things away for one season, but that Christmas tree will sure brighten things up a bit!!
