Today is June 1, which means that Brian and I can officially say that we are getting married NEXT MONTH!  After a nearly 2 and a half year engagement, I can’t believe that the wedding is so close!

As we get closer to the wedding, it is more important now than ever before that I focus on being well rested in addition to exercising and being properly fueled with healthy foods.  As a person who naturally wakes up before the birds and the sun, it is often much easier for me to go to bed early rather than sleep in, but this morningI did something that I have not done in a long time…
photoThat is a MAJOR sleep in for me, the girl who normally wakes up when there are “4’s” in the hour…Boy, did it feel good!  Let’ s hope that I am able to squeeze in a couple more long sleeps before the wedding so that I am feeling better than 100% for the big day.

Breakfast

After my restful night, I whipped up a delicious breakfast smoothie utilizing some Vitacoco Peach Mango Coconut Water that I had on hand.

I haven’t had a smoothie in quite some time, but this yummy morning drink completely sparked a craving within me.  I am pretty sure that you will be seeing quite a few more smoothies around here in the near future 😉

Refreshing Strawberry Coconut Water Smoothie

Ingredients:

  • 2/3 frozen banana
  • 1/2 cup frozen strawberries
  • 1/2 cup Vitacoco Peach Mango Coconut Water
  • 1/2 cup plain, nonfat Greek yogurt
  • 1 packet of Crystal Light Energy Strawberry flavor (gives it a little extra caffeine kick!)

Directions:

Combine all ingredients in a blender, mix until combined and ENJOY!

This smoothie was sooo yummy and the little extra kick from the Crystal Light Energy was just what I needed before I headed out to teach Bodypump this morning.

Workout

I was more excited than usual to teach my Saturday morning Bodypump class, because for the past two weeks I haven’t been able to teach it!

With the wedding just around the corner, there are a lot of wedding events, meetings, and activities that happen on Saturdays so I have had to get a few subs for the past couple of weeks.  I will also have someone subbing for me the next couple of weeks as well, so I had to get my teaching fix in today!

It was such a great class!

The energy was pumping in the gym, and I left the class with such a positive feeling 🙂  What a great way to start the weekend!

Lunch

I came home from Bodypump, showered, and immediately made up a giant lunch salad of spinach, romaine, tomatoes, onion, guacamole, salsa, and baked cod….

Brian and I are headed to a couple’s shower that a family friend is throwing for us tonight, so we are very excited to spend the night with great friends as we get closer and closer to the big day.
