Roasted Sweet Potatoes with Thai Sweet Chili Sauce are our favorite way to enjoy sweet potatoes right now. They are roasted to perfection, and the perfect flavor combination with the Thai Sweet Chili Sauce.
2 medium sweet potatoes
1 tablespoon extra virgin olive oil
¼ teaspoon salt
⅛ teaspoon pepper
2 Tbsp Thai Sweet Chili Sauce
Wash and dry the sweet potatoes.
Preheat the oven to 400 degrees Fahrenheit and line a rimmed baking sheet with parchment paper.
Cut the sweet potatoes into wedges. Toss with olive oil, salt and pepper.
Roast the sweet potatoes for about 25 minutes or until crisp on the outside and soft on the inside.
Remove the potatoes from the oven and toss with the Thai Sweet Chili Sauce. Serve and enjoy.
