All of this cold weather has had me using my crock pot like crazy!

Not only does it make warm, comforting meals super simple but it also makes a huge batch of food that will last Brian and I throughout the entire week…such a huge time saver!

Last week’s slow cooker meal was a delicious and nutritious (rhyme intended) veggie soup.

I had a craving for soup.  When the weather was cold, I remember my mom making a BIG pot of chicken noodle soup…now this isn’t quite my mom’s chicken noodle soup but it still tasted great and warmed me right up!

Slow Cooker Veggie Soup

Ingredients:

  • 2 carrots, chopped
  • 1 14.5 oz can of diced tomatoes
  • 1 chopped onion
  • 1 bag of frozen green beans
  • 4 cups of vegetable stock
  • 1 tsp minced garlic
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp thyme
  • 1/2 tsp rosemary
  • 1/4 tsp chili powder

Directions:

  1. Combine all ingredients in the slow cooker.
  2. Set the slow cooker in low and allow to simmer for 8 hours (all day!)
  3. Serve alongside your favorite protein.
  4. ENJOY!
