Recently, I have found myself in a bit of a food making rut.

Usually, I find the process of planning a menu for the week, purchasing the ingredients, and preparing the food therapeutic, but recently I have lost sight of that. Β I feel like every meal is some sort of baked fish with either roasted or steam veggies, and maybe some quinoa if I decide to prep a batch on the weekend. Β The food tastes good, but it has just been less than exciting. Β  I haven’t been doing as much meal planning as I would like because my time has been taken up by other things, so I have simply stuck with the same meals over and over.

Sunday, I took the same ingredients that I always have in stock and tried to mix things up a bit.

My craving for chips and salsa is what directed me to make this meal. Β I baked my fish and decided to use seasonings other than salt, pepper, and garlic to give it a much different flavor. Β This meal could not get any easier, and it really did taste very good.

Super Simple Fish Tacos

Yields: Β 2 servings

Ingredients:

  • 2 white fish fillets (I used cod)
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp chili pepper
  • 1/4 tsp ground red pepper
  • 1/4 tsp black pepper
  • 1/4 cup chopped onion
  • 1/4 cup chopped green onion
  • 4 romaine leaves
  • salsa
  • optional: Β cheese, tortilla chips

Directions:

Preheat the oven to 400. Β Place the fish in a greased baking dish, and combine all of the spices in a small bowl. Β Once the spices are combined, sprinkle them evenly on each piece of fish. Β Bake for 20-25 minutes or until cooked thoroughly. Β While the fish is cooking, set out the romaine leaves as “taco shells,” and chop the onion. Β When the fish is thoroughly cooked, flake the fish and divide it into the four romaine leaves, 2 per person. Β Sprinkle the fish tacos with the onion, desired amount of salsa, and and cheese if you want. Β Enjoy!
