Happy Monday!

I hope the weekend was a great one 🙂

It was really great for us.  Nothing too crazy going on around here, but it was still a wonderful weekend.  I’ve got some pics for ya, and my weekly meal plan.  Later today, I have a Bachelor workout for ya…anyone else tuning in tonight?

We did lots of hanging with this guy over the weekend.


It was SOOO snowy here.  I realize this snow is old news to many of you, but in Denver the weather has been kind of like a roller coaster.  60 degrees one day and snowing the next! Just nuts.

That would be me standing outside heading into church…it was snowing for sure!

Brian and I had a gift card that we used for takeout from True Food Kitchen on Saturday night.

Brian got the scallops which looked AMAZING but they didn’t have low FODMAP sides or sauce, so I went with pretty plain brown rice, veggies and salmon.  It tasted fine, but unfortunately they had to remake my entire meal because they initially served it with red quinoa instead of brown rice and several of the vegetables were high FODMAP.  Thankfully, they remade the meal but it was a little annoying at the time…

For dessert we enjoyed The Best Coconut Flour Chocolate Chunk Bars and Double Chocolate Banana Bread Oat Bars (both low FODMAP with maple syrup and allergy free chocolate!)  So tasty 🙂

Ambitious Kitchen Desserts

Sunday, we took Bernie to get another round of shots and as a little reward we got him his first Starbucks Pup Cup (or Puppacino) 🙂  So adorable.

  • Asian Cobb Salad
  • Roasted Chicken with Parsnip Fries and a Side Salad
  • Chicken Tortilla Soup with Salad
  • Fish Foil Packs
  • Leftovers!
