This is Brian’s first week of school, so I got back into the routine of food prep over the weekend to make sure Brian had easy breakfasts, lunches and snacks and we had tasty dinners to look forward to.

Here is a look at what we will be eating this week!

Breakfast

  • Breakfast burritos–I made some breakfast burritos inspired by my amazing aunt and froze them for Brian to pop in the oven on the days that he wants them.
  • Hardboiled eggs
  • Greek yogurt
  • Fresh fruit (I bought so much fruit this week!)

Lunch

  • Chopped veggies, fresh fruit, and homemade trail mix as side options.

Dinner

  • Baked eggs with greens and tomatoes (made this last night by kind of throwing things into a pan and it was so good I decided I need to come up with a recipe for all of you…it was so good!)

  • Grilled salmon salads (greens, roasted sweet potato, bell pepper, onion, avocado, black beans, black olives)

dinner

  • Use the leftover grilled salmon and eat it with some grilled veggies
  • Grilled shrimp kebobs
  • Fajitas

Treats

Brian loves having a little something around for a sweet treat after dinner, so I made some healthier options to have on hand πŸ™‚

  1. Love these ideas! I head back to school soon (next week, ah!) and I am freaking out about finding healthy options that can also be quick and portable. I especially love the idea of breakfast burritos that you can just pop in the oven for breakfast.

    • Hi Maelyn!! OK, so I plan on taking the pictures and posting the recipe at a later date, because I am trying to figure out the cooking time. Here is what we put in them…start with your favorite tortilla (whole wheat, brown rice, whatever you like!), then put in some roasted baked potato pieces (kind of shaped like chips), then some scrambled eggs (we like ours with onion, spinach, and jalapeno), then cheese (if you want!), and salsa. Then we just wrap it up in foil and put them in the freezer for Brian to reheat when he needs them. We are still working on the cooking time, but something like 375 for 30 minutes is about right πŸ™‚ I hope all is well with you!
