Heading out for a nice walk in the city

After walking around downtown enjoying the warm weather, the sun decided to come out!  Because of the sudden change in weather, we had to take advantage of the sun and lay out at the pool for a little bit.  After laying out, we got all cleaned up again and headed out to dinner with Brian’s parents.  We walked to a little restaurant very close to our apartment called Bourbon Street, but I forgot to take a picture of my delicious salad with salmon, cucumber, mozzarella, tomato, and these huge raisins.  It was very tasty and filling.

We then came back to the apartment to get some appetizers and drinks ready for some friends coming over to watch the fireworks.  I made a delicious and simple corn salsa that my mom has been raving about for literally a month!

Corn and Black Bean Salsa

Ingredients:

  • 1 can of corn (drained)
  • 1 can of black beans (rinsed and drained)
  • 1 jalapeno (with seeds for more spice)
  • 1 red pepper
  • 1 red onion
  • Lime juice to taste
  • Salt and Pepper to taste
Preparation:
Mix all ingredients together in a bowl, and season to taste.  Let it sit overnight so the flavors can meld together.
Brian’s parents also brought over some cupcakes and meatballs to snack on.
We had a perfect view of the fireworks, and the weather was simply perfect.  Not too hot and not too cold.
